Many of you have asked me for the onion soup recipe ♥ I promised it as a November recipe. This is a very old French recipe. Even if it is difficult to know exactly when the recipe dates from, from what era, to know who is the author, the creator... some attribute it to Stanislas Leszczynski then Duke of Lorraine - who would have discovered it and made known after having eaten it in an inn in Champagne - and not to King Louis XV (who returned empty-handed from hunting late at night and with what he had on hand, would have created the recipe). We find traces of the recipe under other names, and other times such as the Middle Ages for example. Either way, the basics are there and this meal will keep you warm for the winter! This recipe is authentic because it respects the basics. Good tasting !

Ingredients :
4 large onions
50 grams of butter
1 tablespoon of oil
2 tablespoons flour (optional)
1 liter of homemade chicken stock
180 grams of grated cheese (Emmental or Comté for example)
1/2 onion to grill (optional)
Slices of bread
Salt and pepper
