Fish meat rice in soup

魚蓉湯飯
材料:
紅衫魚(細)1斤
冬瓜半斤
草菇(大)1罐(碎粒)
薑1舊
芫荽1棵
白米1膠嘜
處理:
1. 魚,打鱗,除去內臟,清水沖洗乾淨,擎乾水,廚紙索乾。
2. 薑,清水洗乾淨,1開2,拍鬆。
3. 芫荽,切去根部,清水洗乾淨,切碎。
4. 冬瓜,清水洗乾淨,放砧板上,用菜刀切去皮,清水清洗乾淨,切粒。
5. 預先煲滾清水1升。
烹調:
1. 預先煮飯。
2. 大火在鑊內燒熱油1湯匙。
3. 魚放落鑊煎香。
4. 魚的一面煎至金黃色,反轉繼續煎。
5. 魚的兩面都已煎至金黃色,加入薑,加入大滾水1.2升,大火滾起,轉中慢火滾15分鐘。
6. 湯已滾好,過濾至另一邊鑊。
7. 放冬瓜入湯內,滾至腍身。
8. 飯已煮好。
9. 魚,去骨。
10. 冬瓜已滾腍,草菇,隔去水分,放湯內。
11. 裝好飯,放上冬瓜及草菇,並加入魚湯。
12. 魚肉,放飯上,同時灑上芫荽碎。
13. 完成,可享用。
Fish meat rice in soup
Ingredients:
Golden threadfin bream (small) 1 catty
Winter melon 0.5 catty
Straw mushrooms (large) 1 can
Ginger 1 No.
Coriander 1 No.
Plain rice 1 plastic cup
Preparation:
1. The fish, get it scaled. Remove intestines. Rinse thoroughly. Drain. Dry with kitchen towels.
2. Ginger, get it rinsed. Divide it into 2 shares. Beat well.
3. Coriander, cut the root. Rinse with tap water. Chop well.
4. Winter melon, rinse with tap water. Put on chopping board. Cut the skin with chopper. Rinse with tap water. Dice in cubes.
5. Boil 1L of water in advance.
Steps:
1. Cook rice well.
2. Heat up 1 tbsp of oil at high flame in wok.
3. Put fish in wok, fry well.
4. The fish, one side has been fried into golden yellow, flip over and continue frying.
5. The fish, both sides have been fried into golden yellow, put ginger in wok. Add in 1.2L of boiled-up water. Heat up at high flame. Turn to medium-low flame and boil for 15 minutes.
6. Soup has been boiled well, filter it into another wok.
7. Put winter melon in the soup. Boil it until it turns soft.
8. Rice is already cooked.
9. The fish, remove bones.
10. Winter melon has been softly boiled, fishmushrooms, get it filtered. Put in the soup.
11. Put rice in a bowl. Put winter melon and mushrooms on top. Pour the soup on top of rice.
12. Fish meat, put on top of rice. Put coriander cubes on top.
13. Complete. Serve.
