I always did like raw ground beef. I tried this recipe, what a beautiful North Italian tradition. My family is from Oglionico in Liguria. I'll add this to my recipe book for certain. Mille Grazie Orsara!

We used to catch some lamb chunks like you did. We made chili with everything we could find. Every meat, deer, antelope, moose, lamb, etc. .We would have a little of each meat raw. So delicious!

I don't normally eat raw meat, I don't even like rare steaks, but this look very palatable. Is it best eaten cold or at room temperature?

This doesn't look bad actually. Except I never had raw meat before, and I'm worried that this sort of dish would actually make people sick, because it's a dish that calls for meat that is not cooked! But I love how the dish looks at the end!

It's Ribeye, it's zero fat trim is called "European trim".

We love raw meat in this household and usually have it once a season. The beef is great but we like raw horse meat (cavallo) way better. Your version is beautiful! Uprated, shared.

the size is too big for the average filet. it doesnt look pounded and it isnt chateaubriand as it has no "chain" or extra muscle.
