i grew up in queens ny and we used to call that skinny sausage with cheese and parsley..i must say in my opinion that is the most tasty sausage i ever ate..i moved to florida in the 2000s and was lucky enough to find a italain pork store that sell that type of sausage..it is awesome on the grill aswell

This looks fantastic. Around here, our local sausage company is Ostrowski's. Kielbasa and Italian sausage. They are in little Italy, and this time of year, the line stretches for 3 city blocks. It is so worth it.

Wow, a rare glimpse of the "other side of the kitchen". It would be really cool if you could give a quick walk around of where all the magic happens Daddy Jack. A quick description of the tools of your trade would be awesome too, as if you didn't have anything better to do :) Love your videos.

I have watched so many and tried so many of your recipes. All of which were fantastic by the way. Not sure what I will do with my flour and corn starch now. I only thicken with butter as you showed us. Reductions and butter. The flavours are so intense. From Miramichi, New Brunswick, Canada, thanks to Daddy Jack for the fabulous food and great entertainment. Looking forward to seeing your new recipes when we all finally get back to normal again. Take care and be healthy and safe.

I knew Jack would never let that fond in the bottom of that pan go to waste! I always deglaze, even if I'm not using the drippings right then. I label em and freeze em. The way things are going right now, we might need every bit of everything we can get or hands on.

You're sounding old school now Theresa! Waste Not Want Not! Things Are Getting Depression Era Scary, Time to economize! I learned from the best, My Mother! I'll be doing a few of that type of recipe soon. Good Gravy, Jack

@@CookingWithTheBlues You know I will be looking forward to those videos, Jack! And yes. I sure am old school, I learned standing by my Nonna's side as she cooked amazing foods...sometimes seemingly out of nothing! My brother & I would still take a bowl of her Pasta Fagiole over the biggest, fattest steak in town. And that's the truth! Carry on friend, you're doing great work! God Bless, Tess

I love the sound of aluminum pans on the stove. It doesn't have that high-pitch ring that steel has when hit or scraped. You could make some of those long ASMR videos that are trendy these days of just the sounds in your restaurant kitchen.
