Hiroyuki Terada - Diaries of a Master Sushi Chef

Master Sushi Chef Hiroyuki Terada makes our Osaka Sushi plate and shows you the ingredients and how this is done. You'll need the oshisushi pieces to make this. These were originally made in wood over 250 years ago but today, they use plastic which makes it dishwasher safe and much more sturdier.
In Japan, they mostly use Mackerel only but here in the States, we add layers of fresh tuna and salmon and top it off with Ikura and of course, 24k edible gold flakes.
Plating is very simple; cut into six pieces, use fresh oba leaves under the pieces on a elongated plate and you're done. This plate is absolutely stunning in color and presentation. We hope you'll stop by and let us make one for you, or try it at home and impress all your friends and family!

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I believe we are all amazed at how classy and calm and professional Mr.Tenada presents himself...I would like to see a sit down interview to share his story..how long does it take to be a master Chef..inspirations..favorite dishes..why German sports cars vs. Japenese..lol..are Master Chefs in a union..topics like that..it would be a popular video for sure..it is memorizing to watch him prepare these beautiful dishes..and your role in the videos is such a nice even touch..thank you..Rich

Incredible, a great idea to add tuna and salmon to that Osaka sushi. It's amazing to see the different types of sushi from different parts in Japan! Kudos to Chef Hiro, again!! Definitely will have to try this!

I have never eaten sushi. When I first became aware of what it was, the idea of eating "raw" fish didn't appeal to me and the closest I've come to it is eating sardines straight from the can...lolol. But watching Chef Hiro, oh my goodness...I'm so impressed with everything that he does that I'm am willing to try it at least once. Maybe one day I can make the trip to Miami and visit NoVe restaurant just so I can try it. Keep on doing fantastic work, Chef Hiro, much love to you ♥

I had this last week when I was in Miami! Delicious but my only complaint was i could not even see what I was eating since it was so dark at the bar! It was 630pm and i felt like the atmosphere was like a 3am dark dance club not a sushi restaurant. Maybe thats how miami rolls but thats not how i would want my customers to experience Chef Hiro's amaxing dishes. At least i have KZbin to finnally see the beautiful thing i was eating. Cheers! Next time im in miami i will come during daylight ours.

This looks super delicious!!! Saba is a super tasty fish. The color of the layers make this dish look absolutely beautiful! And I love the color of the ikura on top as it really makes the colors pop, but also helps to give the dish a more complete look

I've never had good mackerel sushi in the united states. It's never fresh. But It's amazing in japan. I used to think I hated mackerel until I had it the right way.

I noticed (in other videos) when you roll your sushi and close it, you just press it down firmly in the center, with a couple fingers. Any particular reason for that? When I roll sushi and close it, I travel from the center and slide to the ends, to form it, all the way through (in my mind) and then I pat the ends in. Am I doing an extra step? It's really funny too, I just made a Spicy Tuna Battera at work today. That's what we call the pressed sushi on our menu. Definitely going to try some of your dishes at my work, that surf and turf one looked so tasty, maybe with some chipotle mayo sauce and honey wasabi topping. Ty for these videos, they are very clear and easy to see. Although I feel Hiro is just showing us a fraction of his skills. PS.. My friend just moved to Miami from Atlanta for more nuclear schooling, he's gonna be there for a few years, I'll probably be visiting him in the near future. Will be sure to pay a visit.. =)! PPS.. Right after Hiro talks about the Brand New bottle of gold flakes and shows the lid, the Person recording says "Don't waste that" and Hiro puts back the bottle, you can catch sight of a single gold flake falling to the ground. Personally that had me rolling, guess I have a weird sense of humor.

Amazing videos as always !! BUT !! please allow me to give you a friendly advice. You should have a mic closer to the Chef especially when you make "How to" videos because of the noise from the fridges! ! Keep making a world full of delicacy!!
