Nothing beats the flavors of the Middle East. No French, or Italian food can even compare. We, Westerners don’t know how to combine spices and herbs like the nations of the Near East. My one year in Lebanon was a revelation and I’m a real convert. I brought these flavors and dishes to my family and friends in Norway and they are also converts.

I peel the chickpeas as well. My technique is to put the chickpeas in water, grab a handful and press them gently so they rub agains each other and the peels come of. The peels float unlike the chickpeas so it's easy to remove them.

These videos (+ channel) are an absolute delight! I really cannot get enough of them. Completely inspiring, wonderful, warm, funny chefs + convo and excellent, unassuming production quality. Also, I feel so triumphant today because I have the EXACT same garlic press that I have been using for some 20 years since my very first apartment. Now, I just need the new book and some good "Ottolenghi" vibes.

I love the recipes in all your books. I'm working full time, so during the week there's little time for extensive 1.5+ hr cooking sessions. Maybe some inspiration for a future book: how do we get your style into week night dinners that all take less than 90 (maybe even 60) min to make :-)

When you heat that yogurt you are killing all the good bacteria in it (probiotics) ...the reason people eat yogurt. I have no doubt that the recipe is excellent.
