The temperature is ~68°C. Does not cause heat denaturation of proteins. There is no fixed time. The standard is the state of the foam layer on the liquid surface. If you can mix the bubbles on the surface of the liquid, it will be a rotation without resistance. The guideline is to reach that state. Thank you very much.
