My dad used to own French fry concession stands and we grew up on french fries all summer. He had a huge industry potatoe pealer, and 50 pound bags of potatoes stacked in the back of a box truck. Every morning we had to peel enough potatoes for the crowds for the whole day and night. He used big metal garbage cans filled with cold water to keep the potatoes there close to the stand. He also had a potato cutter like that one but a little bigger, bolted to the counter in the stand. Fresh french fries made to order in a welded deep fryer vats he hand made himself. We sold a lot of them growing up.

In a professional kitchen, we put it die towards your stomach and bucket of water on a milk crate on the floor. As you pull the lever towards you, it creates a much more natural action that saves your shoulder and elbow. If it is right on the edge of the counter, the fries will fall directly into the bucket! Muscle and time saver!!!

Awesome prepping for your family for the coming year. Hint for next year: for Potatoes O’Brien, start cutting potatoes with the French fry cutter. Then cross cut those into the dice. It’s a real time saver. Your family will eat healthy and hearty this next year. Good job.

I do it opposite. I cut them length wise then pop them on my fry cutter and boom, diced potatoes. I tried using my mandolin to cut the potatoes first but they came out too small for how I like them.

Hi Sarah and Kevin. I don't know if you have done this yet but any chance you can make a video of your pantry/ freezer/ food storage? I think many of us would like to drool over it. I would love to see you prepare the potatoes after thawing. That is so helpful to me. Please do that with your frozen, dehydrated, or canned foods. I love those shows. I always add these videos to my play list.

I dehydrate rosemary. I use an old coffee grinder to powder rosemary. The powder will stick to the fries or wedges. And more kitchen gadgets!!!!

Ouh now you can make sweet potato fries, beet root stick, carrot sticks and apples fries. We even used ours for onions, heck of quick way of getting diced onions.

Cheffy tip for taking the tears out of onions. (I used to have to prep up to 20 pounds of onions per day.) Before starting on the other ingredients, prep the onions 1 by 1 like this: Cut off the root end, then cut off the green end (yes, the order can matter), cut in half or quarter, pull off the outermost paper/layer, and submerge in a big bowl of ice water. Immediately get the scraps of each onion out of the way into a bag/can so they aren't sitting on your board. If your knife starts to get sticky or covered in juice, immediately rinse or wipe with cold water. Wipe the board with a cold water cloth as needed also. Using a very sharp, thin knife is better than a thick, dull one. You want to slice cleanly without scrunching a lot of the flesh, because scrunch = vapor in air. Leave the onion halves sitting in the ice water while you do whatever other prep you need, then come back for the onions. In that few minutes, most of the nasty vapory juice that usually leaks out into the air and burns your eyes will now be in the water instead. 99% reduction in cry factor.

As a young man I worked in a Subway sandwich shop & I can attest to the ice water method. We didn't quarter ours first but just threw them in the water whole. Of course, we had nearly infinite supply of ice, so that makes a difference...

I diced up 18 gallon bags of our Texas 1015 onions...used my food processor..flash freezed and put into gallon freezer bags...

I haven't done this because I thought that the potatoes must be blanched, then plunged in an ice bath, drained, then frozen, like broccoli.

I wouldn't follow anything she does for canning. She doesn't follow safe protocols at all. Her potatoes aren't peeled in the jars and they must be peeled for safety.

Great video as always! The fries at the store (and the restaurants) are flash fried before they’re flash frozen. Similar to how you blanch them, they’re fried for about 4 minutes then drained and frozen for packaging. They can be seasoned before freezing if you’re going to bake them after the first fry. This is how you get that great crispy fried outside without the taters soaking up the oil and becoming super greasy. I know you’re super busy and just want to get things done and into the freezer, I just thought you’d like to know, and maybe someone can use this tip. Have a blessed day! Wayne Thomas- Harkless Kunkle yep. You technically only need to freeze if you want to preserve them. You can go straight from the draining to the baking if you are making them the same day.

My neighbor and myself planted 350 lb of potato today. We had 3 different kinds. I have about 70 lbs to plant tomorrow. I have a potato planter. It's about 100 years old. Works great. We hope to have enough for our families and friends for the winter. I hope you have a great crop this year. I enjoy your program. I'm a retired Farmer . I'm 70 years old but still like growing things. My wife and I can and freeze all We have 4 freezer and they are all most full.

Sarah, potatoes are not the only thing you can use that FF chopper for. Working in a restaurant I used it for peppers, onions, tomatoes and even carrot sticks. Cut most veggies in half size to fit and cut better. It will work great on hard squash's too.

I've used that type of potato fry cutter, it was mounted on a wall and it made the lever much easier to cut potatoes.

Kitchen "gadgets" can be a problem if you don't have storage in your kitchen. A cheap plastic thing can be more trouble than it's worth. But if it's going to be a time-saver like Sarah's potato cutter, it's a God-send. She'll have that for decades and probably leave it to one of the girls. Quality is always a good thing in tools ...

@@zak2u2 I always think very carefully before obtaining a gadget. Will I use it? Is it a 'one trick pony? Alton Brown says that the only uni-tasker in the kitchen is a fire extinguisher but, I actually use my egg separator and my tuna can juice remover, so just think before you purchase.

When flash freezing, you can put the items in several single layers at a time. Just separate each layer with parchment paper.

I just had to stop what I was doing and let you know.... I was depressed bc I wasn't getting my quilt done as fast as I wanted to... It's for a birthday in just a couple weeks. I have cancer and it metastasized to my right upper arm bone ( humerous) as well as my liver. So being right handed, it hurts when I use it too much. And yet, if I stay busy and productive, I feel much better emotionally. So it's a balancing act to not do too much and yet keep productive. Anyway today was a difficult day, even having to call my prayer partner sister to pray with me... But I went in the other room while your canning/ freezer challenge video was playing ( from Aug 2021) and the tv just kept going to this video. Listening while I was sewing... You made me smile then laugh. Thank you so very much!!!

Try your fry cutter attached to a wall so you are just pushing down on the guide. Goes super fast.

So true, you can get tired watching huh? lol. Its a bit like the old saying "a stitch in time saves nine." The more she (we) prep our food, the less work it is later. Now, if I can just find the initial burst of energy to do that lol.

You had a lot of fun making this video! I smiled and laughed many times! Good job! I freeze everything on cookie sheets first and then dump in big bags (turkey size)...I just take out of the bag what I want. I would sooner have the big bags than the smaller ones that always seem to get lost in the freezer. Just personal preference. Take care!

I've recently found your channel and am loving watching all the different ways you're preserving & freezing all your food. Have you ever considered showing your canning storage panty and/or how many freezers you maintain? My husband is insisting that you have an entire house to store the food...lol. I have harvested 200lbs of tomatoes already. Still have that many left to harvest yet. Have made spaghetti, BBQ, and regular sauce so far. Potatoes only got 2 bushel. Not enough to store just for fresh. My bird house squash are doing awesome. Didn't think they were doing anything. Some of them are 3 foot long.

I have attachments on my kitchen Aid that do much of that. You make my hands hurt with all the chopping.. but that French fry cutter.. I can see where that would be wonderful to keep from getting flabby arms and having perfect fries! We make potatoes O'Brien with Sauerkraut and brats. Also, when I have potatoes like that, I like to bake them, grate them, then toss them on the griddle out side, and make hash browns, flash freeze them and then we have hash browns anytime we want them. Keep up the good work.... You just make hard work look fun!

Love the Patato O Brian idea.The lipton onion ones I have done those those camping for yrs ! I wrap them with butter and foil and through them in the fire So good ! 👍 On our last day of camping we have Steak and those patatoes ! Tradition. 🥰✌️

@@roseeckstein6534 I think Jo Ann has a valued point... yes, they have a KZbin channel but they don't show everything, and as crazy as the times and people have gotten, I wouldn't show you.. plus it's super easy to find ppl's homes. There is no privacy any more.

Kimberly McDonagh I remember one recent video when Sarah didn't get dinner started until 8 pm because she had such a long day working. She gets more done in a day than I get done in a month. Kevin too.

Since we bought our homestead close to 2 yrs ago...I have bought kitchen gadgets over the time to make my time of making homemade items less time consuming...you have to have tools!

Men can justify the need for more tools, the same for kitchen gadgets. I love them too. I just have to make sure they are multitaskers sinceamy kitchen space is limited.

They are my weakness also. I occasionally think I might want to retire to a "tiny home" with a bedroom in the gooseneck of the trailer, bathroom next to that, and the whole rest of it would have to be kitchen. Cooking with my appliances and sewing, I don't want to give up.

😂🤣 onions! Baggie tip: put your baggie in the cold water with one corner of your bag open until the water is almost to the top. (Don’t get the water in the bag). It will push out the excess air!

I am not too far from you here in Kansas, and agree with you about trying to store potatoes from our garden. Doesn't work. I canned a few but haven't frozen any . I will give it a try as soon as I'm finished with pears. Pear 🍐 tree went crazy this year!

I would buy a 100 lb. bag of potatoes, and put them in layers with dirt on top of each layer into homemade box with a lid. This was kept an old fashioned garage in the back away from a lot of light. They would last the way all winter.

Faster to thaw and easier to stack in the freezer. When frozen, we prop them up on their sides so they stand up tall.

So true Miss Rita! I freeze everything flat, even hamburger or other ground meat. Not only does it save freezer space but it thaws way faster.

Yes please. Where did I go wrong, I canned mine and they yucky brown. Taste ok just add LOTS of gravy.🤣🤣

@@we_r_ducked321run I canned and had them turn brown too. I asked my mom and she said she always soaked them in vinegar/citric acid water before canning and then canned in salt water. But i have a huge freezer and also have a cold room in the basement for potatoes but I live up north compared to Sarah. I didnt really care for canned potatoes 😕.

Another homestead vlogger I watch has one that's good "the 1870 homestead" youtuber has a good potato canning tutorial if you do a quick search.
