I used to make mango wine on my first boat :D It's a good way to use mangos that are almost rotten. Wait until they are over ripe and then you can squeeze the juice out by hand or with a cheese cloth, then add extra water and sugar. I use brewers yeast rather than relying on natural yeast to do the job.

Yeah we just did not have any brewers yeast. Paul had added normal baking yeast to the first batch and then reused the yeast from that. Still worked, but probably brewers yeast would work better , never tried.

@@WhiteSpotPirates Get someone to send you a pack of the high alcohol yeast, you can reach about 20% with that ;) Yea, you can save and reuse the yeast after, but never from a bottle you have drank from directly, it can culture bad bacteria from your mouth - I got e-coli poisoning that way. Here in Cape Verde there are no free Mangos, but when I am in French Guiana later this year I will make it again. Maybe I try building a simple distillery and charcoal filter too :D

Never heard of mango wine it sounds good. My father in law makes ALOT of wine. Only 70 gallons this year . He used to make 120 to 100 gallons . He’s 80 now and still loves his wine,it’s strong. He gets the grape juice from California, I remember his dad making it in big barrels in the wine cellar . Grandpa got the cases of grapes and crushed them . I have access to all the wine I want ,once a year I will,that’s all . Thanks for the up load ,be safe ,glad your foot is better Have a drink for me .

If I may, here's an idea. I wrote an entire book on this subject. Consider getting a distiller. When you make a batch, just ferment sugar, nothing else except some nutrient if you can get it. Ferment 5 to 10 days then distill. Distill the same batch two or three more times to remove any and all pesticides and any leftover unfermented sugar. Add water between distillations to keep from burning up your boiler. Dilute down to 90 proof. Now mix your very dry and tasty unflavored spirits with fresh mango juice (or lemon, lime, orange, ect.). Guess what I found. Super tasty! Best of all, I never get headaches or hangovers! Been doing this since I left Fiji in 2006. Cheers!

I used to make what is called Screech, it is a merchant navy recipe. Plastic soda bottles sit well in the bilge. I use the same recipe with watermelon, pineapple but you can use any fruit even dried. I add a strong cup of tea or two for the tannin's which helps the yeast and also an orange for the vitamin C. When the brew is ready after being double brewed it is bottled and put in the fridge straight away to kill off the yeast and prevent yeast flavor from occurring in the bottle.

Making wine is fun. It will come out clear if you boil the fruit of your choice with the skin on then drain off the water and then put the fruit in a cloth sack and compress it catching the juice in a bucket then add yeast and sugar and let it ferment and rack it a few times:) Jalapenos work well too:)))))))))

You can also use WHITE bread in lue of yeast and the remaining yeast in the bread will spike the fermentation. I would have tossed some limes in to tame the sweet.

Oh really? I did not know the yeast would still be active after baking. A tad of lime would be nice for sure. The wine is actually not sweet at all, though, more kinda sour and yeasty.

Just so u know if u need repellant can slice the mango and rub it all over yourself like cream and no mozzies or sand flies will bother u.. I was stranded off an island off madagascar . mangoes were godsend for repellant for me .but they do attract bees hahahahaha

Yeah She sees your point there...BUT 😜: we did not see the sign until just before we left and it was covered in leaves, so it was easily to be missed. And about the stealing: the mangoes were all on the floor and in two or three days they would have been spoilt by bugs. No one had been there in a while it seemed and we did not see anyone going there for the next two weeks, either (after that we were in a different spot where we could not see the island anymore). The mangoes would have just rotten. So did we do anyone any harm by taking the fruit? I guess everybody has a different opinion about that, I myself don’t think we did. Maybe the bugs were not so happy they did not get to munch on the juicy mangoes...but there were plenty left for them, I would say. We continuously buy from the locals to support them and if we had seen someone there we would have been more than happy to pay someone for the fruit.
