mrs v!! that jar you said to put back in to the cabinet for another day.. is that scraps of material or rags in vinegar!! to wipe your jars with! I love that idea! I don't like to use paper towels for it bc then you just toss them. I even bought the more expensive viva paper towels here in the usa but after a couple times I have to toss them! I have to tell. my grandmother who cans all the time about this idea!! love it! ty

Very informative video, thank you for sharing. I've been making broth and canning it for many years and when I use bones, of any type, I add a good splash of ACV to the pressure cooker and process for at least an hour. When it's finished and strained, you'll find that the bones are now softened enough that you can crush them between your fingers. I then can add the strained bones and vegetables (without onions) to the dog food or added to the compost pile.

Well, it happened yesterday.. its been a long time coming. People crucified me about couponing and dehydrating, but when we had snowmeggedon 2020 and the island shut down for two weeks people had me tortured and then didn't mind coming to help themselves so I put my foot down. Then tues I found people were trying to talk to me about my canning, the same people I cut off in 2020 from my supplies... Then yesterday, I got asked by a wealthy family (we're on income support, this family has both parents working 2 jobs each and 2 small kids) for help with groceries because they couldn't afford to eat. These same folks criticized me, had me in tears and made me feel so stupid over the last two years of building my pantry.. I have a good bit but cannot afford to just go and replace. This is what is happening folks, the well to do are coming to the poor for support and help

I've already done this a couple times, but I do have another bag of scraps I need to process, but I need grab more quart jars 😂 I made instant rice with my last big batch of vegi broth. Saved me last night. I didn't want to make rice for my canned red beans and rice, so I added water to my pan of red beans and rice and then my homemade instant rice. Sooooo tasty! All home canned and an instamt meal. Careful though, our red beans and rice got hotter while it's been sitting on the shelf. Ooooooo my nose was running! So good though!

I have saved vegetable scrapes for many years to make just vegetable broth, no meat bones. I have never pressure cooked the broth, I use my stock pot. I dump all the veggie scrapes ,add a few pepper corns, fill with water. Bring to a boil then turn down to low simmer , let it simmer for most of the day , at least until it evaporates by 1/4. The flavor is always wonderful!

I make homemade broth a lot in my Instant Pot (the best appliance I have ever got next to my canner!) Try using the one that lady gifted you before the canner, makes it so much easier 😊

I borrowed one to process some chickens and make broth. It was so much easier. Especially since we have a glass top stove, the pressure cooker can only be used outside on the propane stove. I told my husband I want to save up for one.

That's a real tongue tripper. I kept trying and all I got was steady steam of stream. It's like when I try to say Brussels Sprouts and I always say Brussels Spouts instead. I'm making shrimp stock from spotted prawn shells. My husband brought home so much so far this year. Next time I asked him to save the heads as well. It makes the broth richer.

I used to can or freeze nearly everything. The last couple years especially has changed that. Now my favorite way to store broth is dehydrating. If I defat it the shelf life will be decades. If it's not defated, like with small amounts I do in a hurry, I freeze it in a ziplock bag. A quart will go down to about a tablespoon! No more worrying about will I be able to find lids.

If you put the broth strained in the fridge overnight you can take the fat off the top in the morning before you dehydrate that's how I used to do it

You can still dehydrate it, just use it sooner, don't expect it to last 5y.

I just finished butchering chickens & kept the carcasses. Can I can the stock from them with the meat or should they be kept separate? I will be cooking them in a roaster so I can do 4+ at a time. Approx. how long will it take to completely cook them?

I always add just a bit of meat in the bottom of the jar when I have meat to go with the broth. But then you do can it as meat not as straight broth

That's actually my mom holding my sister.. There are no pictures of my mom holding me as an infant. The 2nd picture is my mom's mom and the 3rd one is my dad's mom she's she's posing with both my father and his brother and the last picture is my great grandmother on my father's side

She pressure COOKED the food in liquid to make the stock. She stained the food out which left stock. She then pressure CANNED the stock.
