The National Center for Home Foods Preservation time for stock is 25 min for quarts and 20 min for pints. When I was canning I use to do it the same way until I bought the book and looked over it. You can go online also to get the same information. Your canned broth looks beautiful. Now the veggies broth takes longer than the meats so maby you should do the 35 min for the veggie broth time.

Ftr, when onions sprout like that...those greens are NEW onions. I've planted and harvested these and gotten another generation. Also, that veg? Can be dehydrated, ground, and added to soups and salad dressing and whatever else. The meat and bone from that neck? Perfect dog food! If you add a tsp vinegar to your pot, it will extract the final limits of what ever nutrition exists in that food. I love how frugal you are. 😊

This is so timely. I have three big bags in the freezer of vegetable odds and ends and chicken carcass or two. I was trying to figure out a way to make broth but I didn't have anything large enough to do it in one go. Hello sailor. I have Presto PC. Now I know what to do. Thanks again. Bev, hon you could have done this in your instant pot. Same thing......just a FYI! Then canned it up in the canner! I've ordered the FORJARS lids 2x now. They are my go to lid now. Much better than the Ball lids.

Also Bev, for broths for quarts, you only have to pressure can for 25 minutes, even if the broth was meat based. There is no actual meat in the broth. The 90/75 minutes is only for canning meat....broth is only 25 minutes. I double checked my books to make sure because I just canned up beef broth 2 weeks ago and thought oh no, I didn't can them long enough! Whew was I happy it did say 25 minutes!

A little off topic but here it is anyway - We bought 50lb of white, all purpose flour 10, maybe 14, days ago from a regional chain with a big bulk bin section that also sells limited big bags of product. They also had a good dozen pallets of big bags of grains, legumes, etc..stacked about 8 bags high. The flour was $23.80 and last week we bought 50 pounds of White Satin (sugar beet) sugar for $25. Today, they had a new shipment of the same white flour (no pallets of anything) for basically $34. The other half asked if we should have purchased more big bags the visit 10-14 days ago and I mistakenly said no. Today, unplanned we bought 25 pounds of cornmeal for $18 (they only had 2 bags one of which had a hole) and 25 pounds of quick cooking oatmeal for basically $20. There was a $20 sign and empty space for old fashioned, long cooking oatmeal but none in the store, none in the warehouse, and no ETA for a new shipment. We bought 25 lb quick cooking for $20 rather than wait for a new shipment at who knows what price.

It’s 2:30:am in Ohio…can’t sleep…can’t lay in bed so I’m up making chicken soup out of $ .39 lb chicken and misc jars of frozen chicken broth…..my daughter bought me a 12 qtr instant pot…loooovvvee it….and I have an 8 qtr one…I use them probably four times a week…. I just bought $100 worth of Forjar canning lids off of Amazon…..didn’t see your promotion till today. It’s ham time for Easter and just saw spiral ham for $ .89 lb…anyone have some good ways to can ham other then in beans which is always good…… Anyone dehydrate ham….bet it’d be salty……come to think of it I never see dehydrated ham for sale…..at one time the Dollar store had a one lb can of ham for $3…..makes great ham salad…..

I can ham all the time -- it is a GREAT 'go to' shelf-meat. I take the butt or shank portion of the ham, and cube it into 1-inch or 1.5-inch pieces. I raw pack the cubes into pints. I do not add any water (there is plenty in that ham for the jars). I pressure-can per my canner instructions which is 75-min for pints; 90-min for quarts. Home-canned ham stays intact after pressure-canning. I often give jars to my mother who doesn't want an entire ham but occasionally wants a ham soup or casserole. I use my home-canned ham cubes in homemade mac & cheese, potato casseroles, with beans, pork & beans, potato soup, egg dishes, ham soup, split pea soup, casseroles or skillet meals that use ham. I also make my own pork & beans, so cubed ham goes into those pints, too. Endless possibilities!! I got 2 hams at 99-cents/lb on Friday, so today is ham canning day!

I failed my 1st attempt to make beef bone broth this weekend. After removing the beef & bones, I puréed the onions in the broth & pressure canned 24 pints. I made a roux, thickened up to make beef stroganoff for dinner & it tasted good. My bone broth disaster lead to a good alternate ending!

Home-made broths are the very best!! So easy, too... I use my stainless waterbath canner for large broth-making. I start my meat-based veggie broths with the meat, then add veggies. This way, I let the "mess" stay in the stainless canner while keeping the pressure canner clean. When it's time to strain and fill hot jars, it's a quick process. Once lidded, I have my All American canner clean, ready with hot water and a splash of vinegar, and at-the-ready to put in my just-filled quart jars of broth. Please check your canning instructions on the time for broth, I think your canning time is incorrect.

If you were making a beef bone broth would you go longer than the 90 minutes for cook time? So many recipes when using a roaster, go 36+ hours! I know pressure cooking is quicker but for a good nutritious bone broth would you go longer? That's my last canning on my to do list until the garden is producing.

Nchfp says 25 mins for meat broth and 35 for veggie broth (Iknow, it’s an odd difference of time for no meat broth). Good save on the soft veggies.

The one NOT on the handle? It is an emergency valve incase you do not turn it down and it builds TOO MUCH pressure, It will pop up

If you let it cool down you can freeze it flat in ziploc baggies! Better for the freezer than jars.

LOL, great minds do think alike! I am getting ready to make and can vegetable broth, too. I've been saving all of my vegetable tops and tails, and now that I have a year's worth of carrots canned up, I'm taking the "runts" that I have left and adding those, too. No meat in this batch, though.

I have a ladle and a dipper both have hooks on the top of the handle to keep them from slipping into the container. My dipper is about 1 pint measure, so jars fill fast. Both are old so no idea if they are still available.

💁🏻♀️Bev ALWAYS tells about canner safety...you never know who is watching a canning video for the first time😉 ☝️Our pressure cooker from ~25 years ago the husband would vent the pressure cooker when it finished by propping a butter knife under the regulator or run water over it and I never thought anything of it until Bev spoke of it👍🏻

Love the video but my usda guide says 20 minutes for meat broth or stock not full meat times. Making stock in the pressure cooker is the only way to go.

Hi Bev, I went on the website you posted for canning lids. They had a great deal - 120 lids for $30. I ordered both wide and regular but then the shipping was $31 USD! I live in Ontario ((Sharbot Lake) and found that was way too expensive. I guess I'll be sticking to Golden Harvest or Bernarden lids.
