Thanks Bev for this great video. Now I am going to have to pressure can some soup ... after I make salsa, green tomato relish, applesauce, apple jelly. This is in addition to canned yellow beans, green beans, sweet mixed pickles, mustard pickles, chow-chow. Then there is the red pepper jelly, caramel apple pie filling, candy apple jelly. That is a beautiful video! I just made tomato paste, by accident! My little tomatoes were so sweet, and more so by roasting, making salsa but ended up with a very flavorful paste! Canning is so fun!

Mrs. V, i have seen people in videos only can quarts for 75 minutes with meat in them, they say its because the meat is already cooked. What is tour opinion on this method? L❤ce your videos. Bevin made my minestrone soup last week and was looking to can it. I did put just a little bit of bacon in it. I called the extension office to see how long to can it if I had just a little pre cooked bacon in it. And they told me I could not cann it with bacon. I was so disappointed. Wish I had seen this first.

I'm looking forward to canning up some soups for the winter also. I have scraps in the freezer now to make more broth. I couldn't help it but I laughed at the cheese and crackers comment when you got frustrated for a minute. LOL!

Mrs. V, you are the boss when it comes to putting that weight on your canner. I have to stand back as far as I can (yes, l fear the steam) and put my weight on using tongs. The way that you bust right up to that canner and plop that weight on there fascinates me every time. 🤣😂🤣🥰💕❤️

I can attest to not putting ground pepper in it! Boy it intensified and got hot and bitter. Had to pitch my broth it was so bad. I was so angry and tried to save it per Bev's instructions but it was just to much........ I made some of this last year and gave my daughter some and she goes this looks gross in the jar mom. Broke my heart! She is very visual on her food and doesn't like the look of any canned meat! It tastes delish though! I might have to break open a jar for supper this week now! Yummy Bev.

Hi from England. Wash beans. Dont soak! 1 cup per quart jar. Top up to an inch head space with water. Perfect everytime. The Alaska Prepper showed me this way as well as a few others.. Gotta love Bev she's great*kt*x

I have never had meat in Minnestrone soup before. I bet chicken would be good in it. I would bake a pan of cornbread with that soup in which you combined the leftover sauce and veggies.

Hey Bev, what causes tomato juice that's been canned over a week to loose it's seal, only a couple did, I mean they sealed good, over a week later, I was just checking em and the lid come unsealed when I picked it up.

I had the same problem with freezer burned meat so now I freeze meat only in foodsaver bags. The ziploc bags are no good for longer freezing.

Hi this is Sue, Mrs V can you explain what the difference would be if l was to water bath this? l don't have a pressure cooker, and would like to do it, can l do it without the meat and put it in when we want it or just leave it out?

SURE!! There are too many low acid ingredients to make water bath canning this recipe safe. Pressure canning is just that. The canner is heated to a high temp...then air is allowed to vent out of the canner until it is all pushed out..then weight is then added, Creating a vacuum & regulate the correct pressure. These conditions quite literally boil IN the jars at a much high temperature than you can reach by just bring them to the temp of boiling water. Thus killing harmful bacteria and keeping it safe to eat without refrigeration.
