I made your recipe back in August if I remember correctly. My daughter thought I was nuts. Boy was she delighted and everyone loved it. Last month made another 15 pints. Still have 10 heads left and decided to make another round of canning coleslaw. Best recipe I learned in 2021. Bless you and thank you for another addition to our pantry staples. Unbelievable how crunchy it is.

@@oursilvermoments6028 Hi Darlin! Patricia here from West Palm Beach Florida. Can’t wait to try this. Do these need to be in a refrigerator after the water bath? My house ac is set at 76 degrees most year round. Dark closet maybe? Sorry no basements or root cellars here.

I messed up. All went well and delicious, then I 'cooked' it in the canning process! So, I have cabbage cooked coleslaw! Keeping it, but I messed up. How does one keep it from cooking? Just sealing? I know 10 minutes.

I made this the other day, used less sugar and no sweet peppers. I ended up with 7 pints that I steam canned (love steam canning! It’s an approved method for high acid foods and so much more efficient than waterbath canning). I had a half jar left over so I put it in the fridge and we had it tonight with dinner. I drained off the brine, mixed some mayonnaise in and YUM!! We had it in our tacos. It’s already below freezing here in my part of Alaska and it’s so nice to have shelf stable foods ready to go, and a safe way of preserving our garden harvest over the long, cold winter. Thank You so much for "THE BEST COLESLAW " canning recipe I have ever used. You are about the only person who explained the acidity importance. I have been canning for a few years now & thought my coleslaw was pretty good but WOW you have grounded me. I just picked up a bunch of pre-cut coleslaw from an in store special! All with good expire dates so what the heck, I grabbed them all! I have arthritis in my hands and it's super difficult to chop cabbage so I'm sort of cheating on that part. Prepared my coleslaw as you've directed (and copied down the recipe). Thank you very much for sharing! I can't wait to have coleslaw anytime we want it without having to go out to the store.

@ Joan Kelley - I buy those bags every chance I get on mark down/clearance. The ones that feel like they've been vacuum sealed seem to last the longest. So now, if I can't get that type of bag, to make it last longer, I cut off a small corner & vacuum seal the bag to store longer. Makes it possible to keep it fresher if I can't process or eat it all right away. It really helps! Good luck, God Bless & I hope you see this a whole year later! 🙏🙏😁

I've been canning coleslaw for a couple years & love it!! My recipe is very similar. I especially like that the cabbage stays crispy! God bless!

Hello Mary, Should the veggies be bigger chunks than normal coleslaw? Yours looks to be a bigger chop. Does that keep it more crispy?

@@ronnaalthoff9175 I do not chunk it larger. I've even used the bags of coleslaw mix from the fresh salad section of the grocery store when it was on sale. Works great!!

I just found you a few days ago. Happy to see someone about my age and understanding Canadian food prices. Just now I heard you say you were in Golden! Although I am Alberta born and bred my husband and I spent 4 years a half hour outside Golden. We loved our time there and the people we met.

I tried this recipe for canning and it was so delicious! I love coleslaw and this is the best. I didn't rinse the salt off. I forgot and I used coconut sugar 2 cups. This is on my "Got to Have" list and I'm making more! Thank you for sharing.

I made this and I love it so much I need to can another batch the only difference is that I put a bag of pickling spice in the brine i also put some pickle crisp thank you

I made your recipe, but instead of sugar I used Pyure it is a stevia blend, (keto Friendly) it was great even without dressing, and yes it is so crunchy... I love it! Making another batch today and doubling the recipe, so will have stocked up for winter. Thank you for sharing it with us, and have a blessed and wonderful day from the middle of the USA Ahhhhye. :0)

I live in Wisconsin. I inherited a kraut cutter from my Dutch grandparents. Its the kind you sit on and go to town on the heads. I like to have those farmer ( widower) fast foods in the pantry. You may not be Dutch but you've got a good recipe there.. God bless you my dear.

My aunt gave me a jar that my cousin made and I couldn't believe the taste and how crunchy it was. Today, I'm trying to make it myself. I find myself calling my cousin to walk me through it. She told me to watch you do it. Let's hope mine turns out as delicious as hers🙏🙏🙏💕

Hi Colleen. Question- when you rinse the brine off & add coleslaw dressing, does it taste salty afterwards & is the coleslaw mushy or limp?

I have been canning since 1972 with a regular water bath canner and a 22 qt. Presto pressure canner but I have wanted one of the newer electric pressure canners for a while so I have asked for either a Nesco or a Presto electric canner…both brands that I have been familiar with for years. We will see what I end up with. I can’t wait to try canning cole slaw! Thanks for sharing the recipe.

My friend gave me five heads of cabbage. I followed you instructions and made a batch day before yesterday. I doubled the brine. So I refrigerated the left over brine. And made another batch yesterday. Had some left over and not enough brine, so I drained the brine back off and added Mayo. It’s super delish! I can taste the brine a little and it hits the spot! I cheated and used the food processor!🤪

@@kaylathompson75 it's very pretty, but I think you are supposed to wait for a few weeks to eat. Flavors need to develop. I did eat some that didn't fit in jars and yummo

I use Stevia for most of my canning. It’s GREAT! I use cup per cup of stevia instead of sugar. It’s very stable. Thank you for your slaw video. I used stevia and it was very good.

Hi Julie, did your Stevia have erythritol in it or was it straight Stevia. I have used the blend in cooking with cup for cup replacement but not Stevia because it is so sweet. Thank you for sharing your experience. 😊

I just found your page. I am going to try this recipe. I am confused a bit about... did you rinse the cabbage mixture before you placed them in the jars? Adding the brine is it 1 inch of headspace? And are you using pint jars? Thank you for sharing!!!

Looks excellent!! I would be careful with replacing sugar with other options. Sometimes sugar is important for the canning method to be safe for food safety.

Love this, we’re big coleslaw eaters. I will be making this for sure…I was sure there must be a way to preserve some cabbage! It’s inexpensive here as it’s grown locally on a large scale. Although in the winter and spring it is quite hard to find good cabbage that’s not overpriced. WHERE DID YOU GET YOUR GRATER!!!!!♥️

So nice to see you, Colleen! Congrats on your retirement! This looks delicious. I do have one question. It wasn't clear to me if you stir the brine into the coleslaw before putting it into the jars, or if you pour the brine in afterwards. I think you add it before, but something you said made me wonder if you put it in afterwards. This would be a nice thing to have in the pantry!

She said to pour the bride on the mixture then when you fill the jars with the slaw, pressing it firmly, then put more bride to 1" headspace. Ooh, just realized I'm so far behind time! Going to make me some slaw!

This looks really good and very pretty in the jars. I have a couple of questions though, except for the addition of the red pepper and the amount of sugar that was used, what makes this recipe so different from sauerkraut? Is it the addition of the mustard and celery seed that makes the difference or is it the amount of sugar that was used, and Is it very sweet? Personally, I think adding the carrot to my kraut recipe would not only be good but also very colorful in the jars. Thank you so much for sharing another way that we can preserve our cabbage harvest for stocking our pantry shelves. I am adding your recipe to my book to have for future making and I look forward to trying it. Can you share your coleslaw dressing recipe, please? I just did this I made pints. They all sealed , praying I don't chop too small. They are pretty packed but I used chopstick to get brine through. It my first time with this

We love it too. Not only just as it is when it comes out of the jar but we also drain it and add coleslaw dressing to it.

Coleen…I am diabetic but I LOVE coleslaw…have you ever used any of the newer artificial sweeteners like Swerve or like that in it instead of sugar? I just cannot wait to try this. I made sauerkraut for the first time last summer and it turned out great and was so easy. I just found you last week and am truly loving your recipes. I am thinking of starting a “Coleen from Canada Cookbook”…so I can keep all of your recipes and tips in one place. I have two pressure canners and a big old water bath canner and probably 30 or more canning cookbooks plus several that are quite old that were put out by the USDA anywhere from the late 1800’s to the 1950’s. I used to help my sweet, very smart Mom can when I was little…my job was to wipe the rims and put the seals and rings on the jars. Once, probably 20 years ago, I went to a local estate sale and found a closet in the very old frame garage that was stacked to the rafters with full canning jars…most were dated at least 20 years before that and didn’t look very appetizing. I asked about the jars and was told that I could have as many as I wanted to “carry” (a favorite word here in east Texas meaning ‘to take somewhere’ ) so I loaded up my car, put a sign on the closed door that the contents were sold..…ran home and unloaded that batch, grabbed some boxes and rushed back. It took me 5 or 6 loads loads to get them all but get them all I did. Some were very old jars from the 1920’s, 30’s, 40’s and 50’s…many were wide mouth…my favorites…some were blue glass, some had embossed four leaf clovers on them and the words, “Good Luck” on them…some were just unusual Hazel Atlas jars or really old BALL jars. I love old jars and as long as they are perfect, no nicks or chips anywhere, I use them and so far, since 1972, so good. It took me the better part of 10 days to get them all emptied, scrubbed out then washed in my dishwasher….all for FREE! I felt like I had hit the Mother Load…and still do. If I am remembering correctly, that is where I picked up about 10 half-gallon small mouth BALL canning jars…I was SO excited. Can you tell that I don’t have anyone to talk “canning” with? I don’t. I don’t know anyone who cans, knits, or grinds hard white wheat to make flour to make homemabread or who has a sourdough starter that was given to her in 1972! I would sincerely love to learn to tat ……and quilt…someday soon. I have been making pot holders since I was 6… on the same loom. I used to sell them to our neighbors for a quarter…that sure would not even pay for the loops today. I have been talking electric pressure canner for the last two days since I saw you canning in the Nesco. I think the one I want is the 12 qt. Presto. Besides my old Mirro Aluminum 22 and 16 qt. Canners, I have an 6 qt. Instant Pot and an 8 qt. Ninja electric Pressure Cooker/Slow Cooker, and a 3 qt. Instant Pot….and an old 4 or 6 qt Presto pressure cooker and an even older pressure cooker that is called a Minit Minder pressure cooker from the forties….I am not sure if that is the correct name or not but I can’t get to it right now…it still works like a whiz and actually has a whistle gauge on it. I found an instruction booklet here in a box of recipes and old cookbooks that Mrs. Gwen Price left in the house for me when we bought the house when we bought it…in fact we moved in on December 16th, 1988…the house was built in 1912…and I love it. When I found that old inst. booklet, I just could not rest until I found one to buy…found one on eBay in perfect shape and it even had the original odd, not rubber gasket..it is a heavy kind of oil based paper gasket…and another inst. booklet just like the one Mrs. Price left me. I loved that sweet lady. She was the 2nd Mrs. Price…when she married J. M. Price, he was almost 70 and she was 39…he promised her 4 million dollars if she would marry him…she did around 1950 but she never got the money. She did get the house and furnishings, a brick Maid’s House, a brick garage, a small brick storage building, a brick well house…she used water from the well until 1986 then switched to Price Water and maybe 35 acres…maybe more…that was free of and debt. I just can’t wait till I can get my electric canner. It is just too much for me to try to lift my old canners and to try to do a huge load of produce to fill it. Do you ever can raw chicken in wide mouth pints? So easy. Maybe 42 or 43 years ago, my ex and I butchered some big old Cornish- Rock hens…I decided to kill a mean Americana rooster. We did…I canned the meat from him and marked the jars, ‘BARNEY”…gave some people a pure START when they saw the jars with a man’s name on them! Tasted fine with dumplings! Sugar substitutes are fine to use, but it will turn your product brown. Real sugar is part of the preserving process.

I cook my eggs and quartered potatoes together in the Instant Pot for 7 minutes. While cooking I prepare the dressing for the potato salad. Easy peasy.

Hello I am curious as are I noticed you mentioned you were going to rinse off the salt later in the video but never mentioned it later or wrote anything about it in the recipe. Others have asked you about this 3 or 4 times in comments but you have not answered them as you have most other questions...so would you plz answer as I think it would be nice to know as well as how long did you let it drain afterwards? Hello Rebecca, We use it in several ways. Just as it is out of the jar for a side of coleslaw. On a pulled pork sandwich. Or I sometimes drain it, rinse it, dry it in a tea towel and then I add a coleslaw dressing to it. Cheers, Colleen

Hello Brenda, you could keepings in mind that the flavors will be very concentrated so maybe taste as you go. Ground mustard is equivalent to mustard seeds, so 1 tsp ground equals 1 tsp whole seed. Hope that helps. Cheers, Colleen

Just adding this for any one using more cabbage, i used about 32 cups of cabbage (I "thought" i was using 16 cups lol) so I made the brine as she stated and needed to make another batch! (Duh, i had twice as much cabbage) but I did get 7 full quarts out of it
