Fogcrawler’s Old Fashioned Soft Black Licorice
(For an 8” or 10” Camp Oven)
Ingredients:
Reduction Mixture
1 ½ cups water
2 tbs. licorice root, crushed
4 star anise, crushed
1 tbs. anise seeds, crushed
1 tbs. fennel seeds, crushed
Remaining Ingredients
½ cup concentrated liquid (from reduction mixture)
2 tbs. gelatin
1 ½ cup unsulphured blackstrap molasses
½ cups sweetened condensed milk
1 tbs. licorice root powder
1 tbs. licorice root extract
1 tbs. anise extract
1 tbs. olive oil
¼ tsp. kosher salt (optional)
black food coloring (5-7 drops)
¾ cup soft wheat flour
¼ cup soft wheat flour (for dusting)
Directions:
1. Add ingredients for the reduction mixture into the oven and simmer until liquid is reduced down to ½ cup. (About 20-30 minutes)
2. Remove mixture from oven and strain to remove particulate matter. Add the cooled concentrated liquid back into the oven. Sprinkle and stir the gelatin into the concentrated liquid and allow gelatin to soften.
3. Add remaining ingredients into the oven, except the flour and heat to 240° F, using a candy thermometer, stirring the boiling mixture constantly.
4. Remove oven from the heat and stir in the flour, using a small sifter.
5. Transfer the hot licorice into a parchment paper lined small baking dish, allow it to cool.
(Place into an ice chest to speed up the cooling time)
6. Transfer cooled licorice to wax paper and dust with additional flour. Slice licorice into strips and then cut into bite sized pieces.
7. Enjoy!!!

Great ingredient profile, rivaling the old Panda Herb Licorice in the green box which seems unavailable now. My absolute favorite being gone, I've turned to making it myself. Fantastic video that's a godsend to me. 50 thumbs up!

Since this has many herbs, I thought It share the old Panda green box licorice herb list: peppermint leaves, shop vervian wort, orange leaves, marsh mallow root, glycyrrhiza glabra, blackberry leaves, plantain herb, thyme leaves, torch weed flowers, lungwort leaves, elder flowers, milfoil flowers, iceland moss, sage leaves, star anise, mallow flowers, primrose flowers, red poppy flowers.

I wonder how quickly it turns hard if we let it go past 240? Otherwise, thank you for this great video. Its by far the best on the internet. All others start with butter, sugar and ACK CORN SYRUP! Yours I will make.

I like to lightly toast my spices in a dry pan just until I can start to smell them before grinding in the mortar and pestle. It helps release some of the oils and flavors.

I could not say yes, for sure, but I believe a gluten free flour would work as I've used different types of gf in other cooking/baking successfully. Joanie OCIC

I was down at my Asian grocers in Australia and came across licorice powder, it gave me an idea about making an ouzo type drink, but I had no idea about the powder and here I am to find out about it. Nice recipe I might give it a go and it gave me plans on my drink, thanks.

@@outdoorcastironcook The plan is to infuse a homemade vodka with star anise, anise seeds, licorice root, cardamom and a little vanilla. I'll make a sweet tea with the powder and a little glucose to cut it down to 40-45%. I'll let you know in about two weeks time if it turned out alright, I'll base the amounts loosely to your recipe. 🤞

Interesting recipe! Here in Finland we eat liquorice a LOT, but we make it slightly different. But the most important thing is to use licorice root, which you did, unlike most recipes on KZbin. It looks delicious!

Authentic black licorice is very good! All the American style licorice we are familiar with are not actual licorice. Not to say I don’t enjoy Hershey’s twizzlers on occasion lol

There's no milk or gelatin in classic soft black licorice, such as Pontifract Cakes. nor fennel, and anise is optional --it's a filler. If you make a strong licorice root tea, it stands alone.

There is such a variety of licorice types, and recipes dating back centuries ago such as the rounds which are called Pontifract Cakes, which are made differently than ours. This recipe was made to give us a reminder and a taste of OUR childhood version of black licorice known as "Old Fashioned". Whether you make twists, rounds, or other shapes enjoy this variation. You need the flour as a thickener, so you could substitute another thickener like powdered elm bark. Flour also is used to "dust" the finished pieces so they don't stick together. OCIC

You could substitute corn syrup/sugar for molasses, but our choice would be to try and find some molasses. Molasses is commonly made from sun-ripened sugar cane (ours is this kind) or sugar beet juice. This is boiled down into a syrup in which the sugar crystals are extracted leaving the dark liquid (molasses). Molasses can be made from sorghum, pomegranate, carob, and dates. I found molasses and i did the recipe and it tastes so good but the final cooling process was disastrous. Can we cool it down in the fridge? or it should be cooled with the room temperature? and how much time it takes to cool down?@@outdoorcastironcook

We have done both methods of cooling, and putting it in the ice chest worked well. Resist the urge to move it around too much while it is cooling, and we found that a firm plate works best. It should cool for at least 1 hour. Glad you were able to find molasses, Rony. Joanie OCIC

Also, review the webisode at the 13:30 mark to see it turned out on the board, with wax paper, and rolling pin. The first time we made it, it turned out stickier than intended, but was still tasty. OCIC

This is an AeroPress which is used to make my coffee. It has these small round paper filters that just pop right out and can be disposed of quite easily when doing making coffee...or in this case licorice. OCIC

@@outdoorcastironcook Great, thank you very much for coming back to me. Funnily enough I cooked this recipe yesterday for the second time. My dad loves it and I am pretty sure he hasn't had real liquorice like this for many years. None of the shop bought stuff seems to even have any in it these days :-D The two most challenging bits seem to be getting it hot enough without overdoing it and straining the extract liquid. I tried a cheap French press coffee filter but it didn't work very well. The aeropress style filter you mentioned and used in the video seems like it would work better and so might help for next time. Thanks again.

We have seen quite a few recipes for black licorice but this one seems the best, looking forward to trying it.

Why does anybody sift flour anymore.? That was back in the day when sifting was important before we have already shifted flour at the stores lumps does not get in flower unless it’s straight from the grain.

Natural / and with licorice root / Licorice isn't licorice unless it contains the ingredient , great job and im going to follow this recipe , thank you so much for posting

You will not be disappointed... Something worth noting, if you prefer your licorice more on the hard side, instead of soft, just take the heat up a bit higher when cooking it.

Followed recipe to a "T" but could only get the temp up to 223. Result tasted great but was "fudge" texture (waaaaay too soft). Will that extra 17 degrees make all the difference, and... how long at 240?

The extra degrees would have helped. If you're wanting a harder licorice you will need to take it past 240... On a brighter note, at least you got to enjoy the taste of how good it is, without all the sugars and corn syrup.

Looks like a real Australian recipe. Been buying mine at Tractor Supply or Amazon. Too lazy to make it; and I don't eat a lot of it anyway. "Reduction Mixture" -- reminds me of college chemistry LOL

Very nice video- everyone in the family adores black licorice except my dad so I totally wanna try this.. in sourcing ingredients, curious about what kind of licorice extract you used? All I’m finding is like.. health store kind..? Not traditionally used for cooking.. or the lorann flavoring but that’s not an extract.. help? :)

The health food store type is fine... I also reduced licorice stalk over the stove to get my own "extract". The trickiest part of this recipe is the peak cooking temperature. The higher the heat, the harder the finished licorice will be.

Awesome, thanks! I make divinity, fudge, English toffee and peanut brittle at Christmas time so I’ve had a lot of practice with candy thermometers :) still freak out every time I make divinity- my grandma passed about 15 years ago but I swear she’s with me hovering over my shoulder every single time I make it, making sure I don’t botch it :)
