I am a huge fan of skirt steak. The texture is excellent and the flavor can be off the charts. But did you know there are two different kinds of skirt steak? Inside skirt and outside skirt.

This was the first time I tried these two different cuts of skirt steak side by side. Overall I was very impressed by both but the outside skirt was just a bit more tender and a bit more flavorful. If you can find outside skirt definitely pick some up and give it a try.
I marinated these skirts in some Bachan's Japanese BBQ sauce and then made them into some bulgogi type tacos. Carne Asada is another great application for these steaks and you wouldn't be wrong to just season them, cook them, and eat them without doing anything else.
