Can the steel cut oatmeal just be cooked in 5he jar under pressure in a stovetop pressure cooker in the Mason jar in maybe 15-20 minutes?!

I don't have a stovetop pressure cooker, so I'm not sure, but I would guess so. The trivet is important for keeping it from burning.

Great topic! I want to see more recipes with the Instant Pot!! Loved the heavy duty mittens and jacket to ward off the steam :-) Notes: the buttons were a little out of focus when you pressed the Steam button. At the very end it looked like there was 1/2" of excess water on the top? I like the no-clean up technique with the canning jar - genius!

The mittens are more for the contact heat from the jar... the jacket is because it's finally starting to get cold here in Vermont, and I'm currently participating in our cultural sport known as "see how long you can go before turning on the heat". Regarding focus, yeah: my only portable tripod-able video camera is a pretty old Kodak Zi8, and it seems not to do well with autofocus at all. What camera(s) are you using these days? I'd like to upgrade, but I'm budget-limited at the moment. Excess water: yep, a little bit, although it's less water and more liquid-y oats. Once I stirred them, they were a uniform consistency. I think it's just that standard oats get stirred during cooking, and these don't. If you don't like that, you could easily reduce the water quantity slightly.

What do you do about the foam, I read it can clog the vents.

I haven't had that problem because the oatmeal is inside Mason jars. I've heard of people having that issue when cooking large quantities in the main pot, but I've never had an issue with this method.

so i need to add more water for groats with time delay? i'm soaking my groats in yogurt and then having them come on in 10 hours... wasn't sure how much water to add to the yogurt soak (beyond what the groats are in - yogurt//water mixture... plus the water in the pot under the rack...
