Aroma oil - Heat 500 gm oil to 130 C then add in 3 slices of ginger, then 5 gm garlic slices, parsley stem, 3 gm Star anis, 1 small stick cinnamom, 2 gm red peppercorns, 2 gm Round White Cardamom 白豆蔻 (Buah Pelaga Putih), 1 bay leaf simmer over low heat until golden. Sift and keep oil. To marinate Beef - Blend 50 gm onion, 5 gm孜然粉 cumin , 1 gm “ 13香”a type powder like 5 spice powder, 5 gm pepper powder, garlic powder, soya sauce, 6 gm salt, 4 gm chicken stock powder , ½ gm baking soda, 20 gm Soya powder , 80 gm water all mix well and pour into the cut into cubes beef and mix well. Chill at least 30 mins. To marinate mutton - 60 gm shredded onion, 1 egg white, 10 gm oyster sauce, 6 gm salt. I will add in some salt and cumin powder to make it much more aroma. Chill at least 30 mins. B - Smoky Powder that sprinkle onto the meat after grilled 50 gm crushed cumin seeds, 10 gm toasted white sesame seeds, crushed too, 1 teaspoon of special powder. Special powder but he used only 1 teaspoon only as below :- 100 gm chicken stock powder, 30 gm MSG, 5 gm each - 5 spice powder, a concentrated stock powder, 13香, cumin powder all blend well. Pour B into a pan, put a burning charcoal in a foil dish in center of the pan and sprinkle some of B on top and cover for 10 mins to set the Smoky smell. Brush aroma oil when grill the meat then sprinkle Smoky powder all over the BBQ Sticks and serve hot.
