Hi Olga! I'm happy to share the recipe, I'll make it in the future here. Here is the recipe though if you want to try now! Amish Potato Salad--Ingredients--1 pound russet or Yukon gold potatoes, peeled, cubed, and boiled---2 hard-boiled eggs--1/4 cup finely minced shallots--1/4 cup chopped celery---1/4 cup mayonnaise---1/4 cup sour cream---1 tablespoon Dijon mustard---1 teaspoon apple cider vinegar---1/4 teaspoon celery seed---2 tablespoons sugar---1/2 teaspoon kosher salt---1/4 teaspoon black pepper Directions----------- In a medium mixing bowl combine the cooked potatoes, chopped hard-boiled egg whites, shallots, and celery. In a small mixing bowl mix together the hard-boiled egg yolks, mayonnaise, sour cream, Dijon, apple cider vinegar, celery seed, sugar, salt and pepper. Mix well. Add the mixture to the potatoes and mix to coat. Chill for 30-60 minutes.

This is SO good. I ended up cooking an extra cup of macaroni and adding that to it. It was plenty runny enough to take the extra cup. Delicious! Thank you! I like Amish Mac salad from the local grocery store deli but I’ll never buy it again!

Yes, I do. I buy them in bulk cheap from the Mennonite store here. I don't remember how I got to searching for Amish Macaroni Salad. I don't usually like any sort of macaroni salad but I've always heard good things about Amish food. I'm from Texas so I wanted to find something authentic and that means someone like you who is actually from Pennsylvania. :) I wanted to ask though is it usual to add that much sugar to the salad? It seems like it would be awfully sweet. Or does the taste mellow after it sits in the fridge overnight?

Many PA Dutch salads such as this are sweet and sour. Yes, it has sugar, but it's balanced out by the mustard and vinegar and miracle whip. So, yes, it is the norm for this salad. It's different than plain mayo based ones, and a bit more kicky with the mustard, paprika etc.

I like how you diced the vegetables very small, which is what I do too. I'm not find of huge chunks of celery, onion, etc. Great minds think alike. I haven't had Miracle Whip in the house in years and years, but this recipe is a good reason to go get some. Thanks for the recipe Helga.

TY for the recipe. Quick question, would the dressing be the same for the potato salad? I love the deli Amish potato salad but highly allergic to onions. Trying to rush to get my recipes gathered for Easter. Family requested 'something different than the norm' potato salad and mac salad.

No, the 2 potato salads I do are different. But if you like some zip, omit the onions and do a bacon horseradish mayo sour cream dressing for the tater salad.

That’s is almost how my grandmother made her’s. But she put her mayonnaise in a separate bowl and she would add pickle juice ,her spices and a little bit of sugar then her very secret ingredient yellow food coloring. My grandmother hated mustard so she used yellow food coloring in that bowl instead of mustard. Everybody in the family thought she had the best mustard potato salad there was and there was not one drop of mustard in it LOL

Isnt that a lot of sugar???? All the recipes for Amish macaroni salad that I have found here on KZbin and online all have way less sugar in them than yours, their recipes are the same as yours and the ingredients just the amount of sugar you've added is more.

I make it the way I was taught from my Amish neighbors and this is how we like it. You can do whatever you like. But it doesn't taste the same. I only make this for parties etc so I'm lucky if I get a spoon of it.
