Hi Olga! I'm happy to share the recipe, I'll make it in the future here. Here is the recipe though if you want to try now! Amish Potato Salad--Ingredients--1 pound russet or Yukon gold potatoes, peeled, cubed, and boiled---2 hard-boiled eggs--1/4 cup finely minced shallots--1/4 cup chopped celery---1/4 cup mayonnaise---1/4 cup sour cream---1 tablespoon Dijon mustard---1 teaspoon apple cider vinegar---1/4 teaspoon celery seed---2 tablespoons sugar---1/2 teaspoon kosher salt---1/4 teaspoon black pepper Directions----------- In a medium mixing bowl combine the cooked potatoes, chopped hard-boiled egg whites, shallots, and celery. In a small mixing bowl mix together the hard-boiled egg yolks, mayonnaise, sour cream, Dijon, apple cider vinegar, celery seed, sugar, salt and pepper. Mix well. Add the mixture to the potatoes and mix to coat. Chill for 30-60 minutes.

I don't remember how I got to searching for Amish Macaroni Salad. I don't usually like any sort of macaroni salad but I've always heard good things about Amish food. I'm from Texas so I wanted to find something authentic and that means someone like you who is actually from Pennsylvania. :) I wanted to ask though is it usual to add that much sugar to the salad? It seems like it would be awfully sweet. Or does the taste mellow after it sits in the fridge overnight?
@PennsylvaniacookingBlogspot
@PennsylvaniacookingBlogspot 3 жыл бұрын
Many PA Dutch salads such as this are sweet and sour. Yes, it has sugar, but it's balanced out by the mustard and vinegar and miracle whip. So, yes, it is the norm for this salad. It's different than plain mayo based ones, and a bit more kicky with the mustard, paprika etc.
