After a trip to Singapore a couple of years ago, I fell in love with their Laksa! The coconut curry broth is complex, fragrant, and just the right amount of richness. Seafood stock is the base of the broth, and the flavour the comes through is every seafood lover's dream. You might be tempted to skip the clams but trust me...the clams make a huge difference in the flavour of the broth.
There are many types of laksa across Malaysia and Singapore, but this version enriched with coconut milk is the one common in Singapore and is also known as laksa lemak, peranakan laksa, or nyonya laksa. What's your favourite kind of laksa and what is it like?
COOKING TIPS: It's a bit of work to get all the stuff together, as is usually the case for noodle soups, but you can make many components in advance and spread out the work. You can freeze the paste, so not a bad idea to make some extra. The broth can be made days in advance, and even the noodles can be cooked in advance. If you're going to make the broth ahead of time, make sure you cook off your clams and shrimp as well since raw seafood doesn't last long, but cooked seafood can last up to a week in the fridge.

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Question. You know it's really hard to find galangal here in the Philippines. Do you think if I order dried galangal or powdered galangal online, it would still taste as good? Mostly when doing your recipes, I used dried because its the only thing I see available online that could last a long time. Like dried lime leaves and dried galangal Thanks in advance 😊

I am Filipino, who grew up in the US, now living in Australia, worked in Singapore for a few years....fully aware that this laksa recipe is very much Malaysian (with a Singaporean twist)...learning how to make it from a woman of Thai heritage...who now lives in Canada ! Whew... Funny world ! We all accept that this is life. I hope Asian racism stops. We brought the world beauty and food.

I'm french but my husband was singaporean (malay/indonesian), been there so many times when he was alive......I master lots of recepies including rendang! love S.E asian food; I live in Paris chinatown where I can find most ingredients but no more laksa paste (been looking every shop) so now, gonna follow yr recepie and will do it ''home made'' thanks a lot!

My first trip to Singapore was in the 70s, only two western hotels in town, and NEWTON CIRCUS!! Best food in Asia...EVERYTHING...Thai, all kinds of Chinese, Malaysian, Indonesian, Filipino, ad nauseum. And the soups were divine, because the stock is always homemade. I could live on Asian food, especially soups, the rest of my life. Great recipe!!

Pailin, this is just wonderful. I’ve watched it a number of times. You should do an update featuring a _quick_ _version_ . I know the full, made from scratch version is the best, but a quick version would be fun too!

I try this recipe because today im on leave and i hate to eat rice so i try laksa today and it turn well...no word to describe the taste Pailin...we no need spent money to go singapore and eat laksa...at home whole family can taste the Singaporean laksa...😉

I've started a tradition in the last few years of making Laksa on boxing day with the left over seafood. Last year I made it with a whole lobster! It was so good. This year I only have one lobster so I probably won't use all of it. But have prawns for it. I can't wait! yum!

You need to toast your belacan before blending,the same goes to candlenut, it would be much more fragrant. Too bad you cannot get daun kesum. Cheers from Singapore.

just started watching foreign tv shows (Korean , Thai i am English) i found them like the shows i watched as a kid more story that swearing and special affects, several show this laska in and it looked good so now seeing it made going give it a try. great vid and you love off cooking shows. just got your cookbook on kindle so i can now see if i can make some the things i see on the shows that look good

I have tried your laksa recipe and it's taste amazing. To me, it is a must to have sambal and lime as it is so creamy. And make sure you eat in a small quantity. Candlenut and coconut milk does make you full in just few minutes.

Good job Pai! Note - You can also fry and cook all the side dishes (tofu/fishcake/prawn) in advance. That way if you do an open house your guests just gonna assemble them and enjoy, like a taco party! You can also add any type pf salad-y leaves and lime if you want. 💕

You make it so easily which shows that making Laksa is not so time consuming after all (even though traditionally speaking, the curry paste - rempah - takes forever to pound). I love your recipe! 😊

Hi Pailin. When i cook laksa, I add in a handful of laksa leaves together with the stems into the shrimp stock and let them mingle their flavours together as the stock boils away. I learned that in a recipe and the laksa leaves add more flavour to the shrimp stock.

I live in California n I make my laksa from red Thai curry paste n coconut milk. I use fresh basil to top the dish. Worked for me. I try not using shrimp products. I substitute salmon jerky for dried shrimps.

Your video here drove me CRAZY!!! I was so hungry watching this. I've travelled in eastern & western Malaysia, and had the regionalised Laksa from Penang all the way over to Sarawak and Sabah. I haven't yet been to Singapore. I would love to make this recipe but I do find the prep a bit daunting. It's really nice to see your prep. I live in the UK, & Malaysian & Singaporean food *can* be found here, thank goodness. OK, I'll summon my courage & try.

lovely there's a recipe available for this dish I only knew from restaurants in Canada. I'm currently, unfortunately, living on the other side of the continent, far into South America where there's absolutely none of the ingredients shown - except for garlic I'm so homesick!.... How I miss Asian food!! When I came down to South America I brought just a bit of dried shrimp and people thought it was "awful" how I could like "that rotten" smell... if they only knew what (to me delicious) shrimp paste smells! thanks for this recipe and I hope one day the pandemic ends and I may go back at least, to Canada to a multicultural city where you can find even stores where the ingredients you show are sold. Shrimp paste is something else... I have a jar of it in my fridge, recently bought, and used once so far. That is easily one of the most foul-smelling things I have ever cooked with coming right out of the jar/block, to be honest. But I believe I used it in a Thai seafood curry, and it blended in lovely. Will keep using it, but you couldn't pay me to eat a teaspoon of the stuff. I've heard of laksa lemak plenty, but have never even had a chance to try it before. I'm definitely bookmarking this video.

You can use the laksa paste to make fried rice or mee goreng as well. So tasty!

I am allergic toward seafood, but everytime someone served this, forget about all the itchiness, all the swelling.. It's just so GOODDDDDD

leave out the seafood cook chicken pieces with bone in some laksa in singapore has chicken in it

My favourite food and you made ‘one spoon’ Laksa which is the easiest for me to eat. Great job.

Hi Pai, thanks for this recipe :) This is a Katong style laksa, where the noodles are cut into matchsticks. In Katong laksa (unlike the usual Singapore laksa), we do not add tofu puffs. Just wanted to share this
