About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

Hi, Pai! I really enjoy your videos! Very well organized, well presented and quite educational, and you are a very articulate speaker. And I think I'm falling in love with you! :-) I've always used canned coconut milk for my Thai cooking because I didn't know there was any other option, but thanks to you I now know! What brand of coconut milk in a carton do you prefer?

Well, what you need is acid, so you could substitute lime juice or lemon juice, but you would have to add a little bit at a time and taste, because tamarind isn't as acidic as lemon or lime. Tamarind does come in a pre-made sauce/juice/concentrate version so you don't have to soak it yourself, but I'm not sure if that's what your "tamarind sauce" is. I'd check out the ingredient list, and if it's mostly tamarind with not much seasoning or flavoring, i say give it a try!

This is the best satay tutorial I have ever seen. You take your time and give excellent directions and pertinent information. Keep doing more videos, Plzzzzzzz. I need you in my kitchen to teach me how to cook thai!

It serves as a palate cleanser actually. You're not supposed to dip or mix it, you're supposed to eat the pickles along side the pork to cut the richness of the dipping sauce (we often just pick it up by poking it with the pork skewer). Hope that makes sense!

Wow! The peanut sauce is the best we have ever made! It turned out really thick and goopy. The oil floated to the top just like you described. The sauce was definitely the right hotness. Thank you very much for sharing this outstanding recipe! Two thumbs up, Lia and Marty

You know what, I gave it away when I moved back to Canada, and I don't remember exactly what brand. But I think it's Hitachi, I got it from Bed Bath and Beyond for $40. Great deal!

I love the Cucumber/Shallot/Chili pickle - Question I have do you pour the vinegar on to the cucumber as soon as you take it off the burner or wait until it cooled off? Thank you. BTW I love all of your recipes, thank you so much for sharing them.

Thanks!! I went to my local asain store but they didn't the box type coconut milk like the one you use. Can you recommend a online store that sells this brand coconut milk?

Putting up all the ingredients at the end helps out a lot! Good thinking!...I'm wondering, if I went to Ranch 99 (my local Asian market), would I be able to get the tamarind paste there. I have never seen tamarind paste, I have only seen it in its natural state (in pods) at my local Mexican Supermarket (La Superior or Mi Pueblo). I have used them to make agua de tamarindo, but maybe I can use the paste from now on? Don't know, I'd have to test it. Thanks again for this recipe!

Saw Wa Dee Krup Pailin, I am from Ireland but now live in Thailand (And Love it). I have been searching for a nice satay w/ Peanut Sauce and think your recipe is Da Bomb :). Unfortunately I am a vegetarian so I will use Fried Tofu instead of moo and leave out the Nahm Pla. I look forward to enjoying your other recipes and hope you get a chance to visit back home soon. It was very nice! Thank you. Though I'm wondering...you mentioned that the turmeric isn't really for taste. I tasted it quite a bit. I like turmeric, so it didn't spoil the dish or anything. But I was still wondering. I did use about a tea spoon of dried turmeric so perhaps next time I should use less. Also I used panang curry paste as I didn't have red curry paste at hand. Still, turned our rather nice even though it perhaps wasn't so authentic.

Tomas Z If you like the taste of turmeric, then it's fine, but too much turmeric makes it taste kind of medicinal to me. Panang curry paste is fine to use :)

I don't really get the purpose of the chilli/shallot/pickle mix. Does it serve as another dipping sauce, and are you meant to mix it with the peanut sauce on the meat?

So when you say canned coconut milk cannot be broken is that scientific or just in your experience? I like using the canned because I can buy larger quantities of coconut milk for less. I loooove coconut milk so much I never have any less than six cans of it in my cupboard at a time. And I agree, when I make Thai satay at home I use pork, cuz it's just way yummier. So many people are afraid of using pork cuz they think it's fattening. You just bit into your satay. Now I'm Hunrgy!!
