Thanks so much for this. I bought my first instantpot yesterday. Im not a good cook, this is the second thing I've attempted and the best thing I've ever cooked!! Amazing! :)

Hi there, thank you for trying the recipe. If you're having it with rice, you can get 6 servings. Or 4 very generous servings.

@@PainttheKitchenRed not going to lie, I've made your recipe 4 times since I posted this LOL the lime leaves were tricky not find, but they make all the difference. The ONLY thing I added was I crushed a stalk of lemon grass and threw it in with the lime leaves.

love your videos, you should make a book even if just for converting to instant pot. I love anything curry and usually eat 2 - 3 times weekly. I have not seen the curry paste you recommend but I do use Patak;s and I like it. I live in Ontario Canada so if it as good as Patak's where can I buy the brand you use? I don't play around with inexpensive coconut milk and usually buy organic as it is not that much more expensive. I especially like the lime pickle. great explaining keep it up.

Thank you for your question. Patak's is an Indian curry paste, so very different flavor profile from the Thai curry paste. It really is very good. I'm sure you have an Asian store in Ontario, and maybe they'll have some good Thai curry pastes.

That looks so good. I saw reviews on Amazon that people complained of aroy-d coconut milk not emulsifying. Is this a normal and proper condition for this brand that maybe reviewers aren’t used to? I wouldn’t know.

Ronald, when I pressure cook coconut milk, it always appears to look curdled when I open the Instant Pot, but once I stir it up and heat the ingredients, it becomes quite smooth. I generally buy Chaokoh, but I have also liked Aroy-D, with no issues. That being said, amazon sometimes does have knockoff products, so you never know....

In Spain we get istant pot GM I wonder if it's the same... If I don't get Thai bassil leaves can i omit?

Hi there, I'm not familiar with that model/brand. If it's an electric multi-cooker, it should work the same. You can either omit Thai basil or I recommend using Italian basil. Not the same, but similar flavor.

Hi Kanwal, I'm thrilled that you liked the recipe. You would keep the same cooking time and if you like the curry to be thicker you don't need to double the water/broth.

Can u advise how to use the saute mode.. we click the saute button and do we set temp and time and then press start??

Gaurav, yes that's correct. It should default to normal/medium temperature and 30 minutes time. You can just press Start and press Cancel when you're done. If you need info on how to set the temp and time, let me know your model.

Thanks for your question! You can follow the same directions but instead of pressure cooking the chicken just simmer on the stovetop till the chicken is done, about 6 to 8 minutes. Everything else should be the same.

I think so, but haven't tried it. I'm not sure if you need to thin it out with water during pressure cooking, and add the rest after pressure cooking.
