PAKODA KADHI
(KZbin)
INGREDIENTS FOR PAKODA:
* 1 cup Gram flour
* 1/2 cup Onion (chopped)
* 1 tsp Carom seeds (Ajwain)
* 1 tbsp Coriander leaves (chopped)
* 1 tbsp Garlic, ginger & green chili paste
* Salt to taste
* 1/2 tsp Turmeric powder
* 1 tsp Fruit salt (Eno)
* 1 tsp Lemon juice
* 1 cup Oil (for frying)
FOR KADHI:
* 1 cup Curd
* 1 tbsp Gram flour
* 2 tbsp Oil
* 1 tsp Cumin seeds
* 1 tsp Coriander seeds
* 2 tbsp green chili (chopped)
* 1 tbsp Ginger (chopped)
* 1 tbsp Garlic (chopped)
* 2 whole dry red chilies
* 8 to 10 Curry leaves
* 1/2 tsp Turmeric powder
* Salt to taste
* 1/2 tsp Coriander powder
* 1/2 tsp Cumin powder
* 1/2 tsp red chili powder
* Water as required
* Coriander leaves (for garnish)
* 1 tsp Kasuri methi (dried fenugreek leaves)
FOR TADKA:
* 1 tbsp Oil
* 1 tsp Garlic (chopped)
* 1/2 tsp red chili powder
* 1/2 tsp Kasuri methi
METHOD FOR PAKODA:
* In a bowl, mix gram flour, chopped onion, carom seeds, chopped coriander leaves, garlic-ginger-green chili paste, salt, turmeric powder, and water to form a batter.
* Add fruit salt and lemon juice to the batter and mix well.
* Heat oil in a pan. Once hot, drop spoonful’s of the batter into the oil to make pakodas. Fry until golden brown and crispy.
* Remove the fried pakodas from the oil and place them on a plate.
METHOD FOR KADHI:
* In a bowl, mix curd and gram flour to form a smooth mixture.
* Heat oil in a pan. Add cumin seeds, coriander seeds, chopped green chili, ginger, garlic, dry red chilies, and curry leaves. Mix well.
* Add the curd-gram flour mixture to the pan and mix thoroughly.
* Add turmeric powder, salt, coriander powder, cumin powder, red chili powder, and water. Stir well.
* Cook the kadhi mixture for 10 to 15 minutes until it thickens.
* Add coriander leaves and Kasuri methi. Mix well.
* Add the prepared pakodas to the kadhi mixture and mix gently.
FOR TADKA:
* Heat oil in a pan. Add chopped garlic, red chili powder, and Kasuri methi. Fry for a minute.
* Pour this tadka over the prepared kadhi mixture and mix well.
* Serve hot with rice or chapati. Enjoy your Pakoda Kadhi!
