SPINACH CORN SABZI
INGREDIENTS
Spinach : 300 gms (washed)
Sweet Corn : ½ cup
Butter : 2 tbps
Maize flour : 1 tbsp
Tomatoes : 200 gms
Asafoetida : 2 pinch
Cumin seeds : ½ tsp
Coriander powder : 1 tsp
Kashmiri chilli powder : 1tsp
Dry chillies : 2
Ginger : 1 inch grated
Green chillies : 3 Slit
Garam Masala : ½ tsp
Salt : as per taste
Milk Cream : 2 tbsp
Coriander leaves : 6 tbsp Chopped finely
Turmeric : ¼ tsp
Water : ¼ cup
METHOD
STEP 1: Take 2 bowls of water and bring them to boil in 2 separate vessels. Add 1/4th tsp turmeric and ½ cup corn and the 300 gms washed spinach to another vessel. Boil for 3 to 5 minutes.
STEP 2: Immerse the boiled spinach in ice water to retain the natural green colour. Remove the boiled corn from water. Make puree of 200 gms tomatoes. Also make spinach puree once it is cooled.
STEP 3: Place a kadai on the gas heat and add 2 tbps butter, add ½ tsp cumin seeds, 2 dry red chiilies, 3 slit green chillies, 1” grated ginger, 1tbsp maize flour and sauté well for 3 minutes. Add 6 tbsps of chopped coriander leaves, tomato puree and mix well. Now add 1tsp red chilli powder, 1 tsp coriander powder and ½ tsp garam masala mix well. Then add ¼ cup water mix, close and cook for 5 minutes till the butter is released. Add 2 tbsps milk cream and mix well. Now add ½ cup boiled corn and the spinach puree mix well and cook for 2 to 3 minutes and add salt as per taste.
Remove in serving bowl. Enjoy this colourful flavourful Spinach Corn sabzi with roti, paratha, naan or rice.
