I’m polish and Lebanese but my grandparents have passed away so I havnt had much exposure to Arabic culture other than through me other middle eastern friends. I was always so sad to have been so young when my grandparents passed as I never learned any of their recipes. I know this is Palestinian food but your channel has been so so nice to watch, I’ve been making so many of your recipes and it fills that little void, thank you so much

I made this last night, with 4 zucchini and one yellow squash. I keep oils to a minimum, so I only used about a teaspoon of oil in the garlic and salt paste, which also helps to get all that garlic goodness of the mortar. It’s delicious! An excellent way to use extra summer squash And it’s vegan, yay! Thanks for sharing

Thanks for making this one. One of my favourite food. Simple yet full of flavour. We usually add 7 spices n dry mint. Finish off with a squeeze of lemon n olive oil. Your recipe looks great too will try it this way

love love love! This is great with seven spice too, I personally tend to keep mine really simple and let the garlic and squash be the stars. My mama adds dry mint too, and she usually lets her squash stay intact a bit more, less like me where I totally pulverize it. Sahtien :)

I tried this tonight. I'd recommend simmering the garlic paste to round off the raw intensity. Also I added black pepper and some Aleppo pepper. Leaving it overnight in the fridge will help unify the flavors, too.

My mom used to used the zucchini innards in another way. She used to fry onions, add the zucchini and once the squash is cooked well (and water is gone) she would add some eggs to it (and spices). Both are great dishes

I live in a Western State where we pay little to no attention to world conflicts. Another variation, add about 1⁄4 lb of fried up ground round or lamb, crumbled. And instead of turmeric use allspice. My ex husband is Palestinian, and he would make this whenever we made stuffed kousa. Delicious. Your recipe is practically the only one for lub that I've ever seen on the internet. I just happened to run across it by accident. I'll be looking up more of your recipes to see what else you've got. Take care.

Omg I just made this and it’s like one of the best things I’ve ever eaten! I’m always at a conundrum as to what to do with all the squash I grow. I just had a dental implant and have to do mushy foods! This was like the best mushy food ever! And then I mixed it with mashed potatoes and it was fantastic. I’m excited to try it with a zucchini next! Thank you. So much. Your videos are fantastic and you are wonderful to watch. Yes, I love easy recipes too.

This is a recipe I needed to see, we always get an oversupply of Zucchini during late summer in the Mid-Atlantic United States. I'm going to have to do some experimentation to determine whether Lib Koosa can survive long-term canning or jarring. There is such a thing as canned baba ganoush, so I feel optimism if not just naivete. I used to make something similar with lemon juice and quinoa, and it was a really good side dish for processed meat or vegan protein. Here are some question-ish ideas about Lib Koosa: >Fermented honey added while cooling. >Fermenting turmeric with salt for depth of flavor. >Types of salt and how they contribute flavor >Sieving out the seeds and peel to make a savory Zuc jelly, like pepper jelly. Thing I want to know is: Am I within normal variation for this recipe? Finally, this looks like it might be at least incidentally related to depression-era bread and butter pickles.
