Palong shaak'er ghonto is a kind of panchmishali torkari in that it uses an assortment of vegetables-potatoes, sweet potatoes, pumpkin, moolo (radish), sheem (broad beans), and brinjal-besides the spinach (palong/palak). As the illustrious roll-call of ingredients suggests, this palong shaak recipe brings together flavours, textures (and don’t forget nutrients) from a variety of sources. This particular Bengali vegetarian preparation is a herbivore’s delight, although it is enjoyed by omnivores in equal measure. What’s more, the spinach curry we show in this video is several times more tasty than the regular palong shaak bhaji.
This dish is a ‘ghonto’, a dry curry. Here, the vegetables are steamed in their own juices until they are soft, exactly like in panchmishali torkari. There’s not much to this recipe in terms of spices or technique. Sparsely spiced with just turmeric and cumin powder, this recipe relies on salt and sugar to help draw the moisture and flavours from the vegetables. They cook on low heat, covered, for about 40 to 45 minutes (don’t forget to stir regularly to prevent burning), enabling the juices from the veggies to mingle together to produce a unique-tasting dish.
When wintry greens are crisp and in season, there is no better use for spinach than making this delicious (did we say nutritious?) palong shaak’er ghonto, which can be served with steaming rice and dal.

Love your videos and I have been making the dishes. I am a punjabi who grew up in Bengal and love Bengali dishes and now I make them for my wife and friends. Today is the 3rd time I made Palok shak-er ghonto, in last 1 month or so, since I have started watching your cooking.

I’m a bong in every ways, never really appreciated authentic Bengali food except a few (non vegetarian dishes) until I moved out of home and started missing home food ( MA er hath er ranna). And thats when, all the cravings and missing started happening. And also that’s when calling up Ma every Sunday to learn a recipe to satisfy a bong tummy started happening. And then came YOU guys with this wonderful and delicious looking recipes. And I didn’t have to bother MA and just look at your recipes and just tell MA what I have cooked. Now the Mallu husband and I enjoy some bong delicacies often( atleast once in a month). Thanks to you guys. You guys are amazing. Never thought cooking food ( especially our very own bong food) could be so much fun. Thanks to you guys from the bottom of my heart. Hope to see more from you. Thanks once again

Hello, I tried this recipe and it came out really well! Growing up, my family was great friends with a Bengali family and I would wait eagerly to go to their home just to eat the food that "Das Aunty" made. It is really great to finally be able to make some of the dishes that she made thanks to your lovely channel. I obviously did not have dal'er bori and substituted it with "onion karudams" from my MIL's place. I know there a lot of passionate cooks in the comments section who are voicing their opinion but I just wanted to let you know that even with all the little tweaks (less oil, less sugar and karudams) the ghonto was unique and delicious. Thank you!

Rarely seen such a lovely and holistic approach to making a video on any cuisine. Your cooking ingredients, process of chopping, frying and serving food with the captions, natural sound of cooking, and the background music makes it unique. Not to forget the descriptions you write later,of the recipes... which add more flavour to your ghontos and other torkaris. Kudos. Carry on with more fantastic productions of Bengali cuisine.

It always takes me ages to dry out the water from palak. The steaming first method is gonna really help. Also, us north indians only know either paneer or in tougher times, aloo in palak. I think adding all these other vegetables is brilliant. Also, when a recipe asks for so many vegetables, what I read between the lines is basically 'add whatever is in the Fridge'. Screw 'authentic'. Thanks. Great job as always.

Hie bong eats ...i m a bihari ...a strict vegetarian and the sight of non veg food makes me nauseous...i have come to bengal to do my MD and all i see are non veg dishes here..all around...but ur recipes are making me fall in love wd bengali cuisine ....the vegetarian dishes look to die for let alone n cook and eat them...🙂and the plating...damn !!!🤪 God bless u guys... personally i dont know or care about the authenticity of Bengali or any cuisine...all i care is how gud ur food looks and ...God, i wud love to try all ur vegetarian dishes...thnx guys for bringing it out for all of us 🙂

Ghonto is one of the best nutritious things one can have; Two observations: 1. To have the slurry texture, veggies not retaining their shapes are important. It gives that bit extra taste to the Ghonto. 2. As pointed out in a few other comments, feel that flavour of the the Palak will be diluted by using coriander. Better to refrain. However, as usual beautiful intiative and clarity / edit of video footage is much professional. Have become an ardent fan of the channel. My best wishes to both of you on Bijoya Dashami.

Hello There! I looked up you guys once again for cooking shaag. And it brought back so many old childhood memories while watching this. There is always something to learn. Living in Karnataka, when I wanted to learn or teach myself Bengali cooking, the problem was not the recipe but the tips you learn when you cook ‘with’ someone. I am thankful to both of you for giving me the confidence and the in-depth knowledge of Bengal cooking. I’ve borrowed, learnt many tips including the use of utensils, from your videos and online site. Besides all of this, what is heartwarming is the simplicity and sophistication of the videos. It focuses on the process of cooking. It’s understood a lot of effort goes into it creating these videos so that others can benefit and enjoy cooking and eating Bengali food. Please carry on the passion and tradition, and may nothing else come in the way other than the hunger for more-food! from a food lover Bengali.

এইটে আজ বানিয়েছিলাম। খুব ভাল হয়েছিল, আমি শাক মানেই বুঝি পাঁচ ফোড়ন, তবে কালজিরে দিয়ে এত ভাল হবে ভাবিনি। বেগুন ছিলনা , আলু কুমড়ো আর শিম ( বিন নয়), বড়ি আর ফ্রোজন পালং দিয়ে করেছি। এই পদকে আমাদের বাড়িতে লাবড়া বা চচ্চড়ি বলত ডাঁটা শাক দিয়ে হত। ডাঁটা চচ্চড়ি বলে। কুমড়ো শাক দিয়েও খেয়েছি। তবে পালং এর ঘন্ট বলতে যেটা হত, সেটা আলু আর মুলো দিয়ে সর্ষে বাটা আর শেষে দুধ দেওয়া হত আর ঘি। তবে রেসিপি ভুলে গেছি বলে করতে পারিনা।

It's been more than a year that I went home. Missed poila boisakh, pujo and pretty much all festivities. Your channel is the only solace I find other than the occasional trips to CR Park. Everything was really good- onething is coriander leaves- baad dile beshi bhalo hobe, because palak er ekta scent achhe- begun bhaja concept ta khub bhalo laglo- overall very nice
