Pampushka is a Ukrainian bread that is dressed in garlic infused oil - This is my first time making pampushky and I think this may actually be the most enjoyable garlic bread I've eaten - it's fluffy and light, and the garlic flavour is superb and prominent, without being harsh or overpowering.
I'm making this because I just wanted to celebrate something good and positive about Ukraine - I don't imagine this video will help tangibly in its own right, but if you want to do that, there is a fundraiser attached to this video for a charity delivering aid to Ukrainian refugees.

Recipe (adapted from www.nigella.co...) :
For the bread:
400g strong flour
7g sachet (1 teaspoon) dried active yeast
1 teaspoon sugar
1 teaspoon salt
1 egg, plus lukewarm water to make up to 225ml liquid
1 beaten egg to glaze before baking
For the dressing:
Small bunch of green garlic, or 2 cloves of white garlic
A small handful of parsley or other green herb
3 tablespoons sunflower oil
Pinch of salt
Method:
Combine the dry ingredients
Add the liquid ingredients and mix until a dough is formed
Turn out the dough and knead it until there are no crumbs or dry patches
Place in an oiled bowl, cover and leave until doubled in size
Knead again, then cut into 8 pieces; form each piece into a ball
Place in an oiled tin about 25cm in diameter, cover and leave until doubled in size again
Baste with beaten egg
Bake at 210 Celsius fan (220 static, 410 Fahrenheit) for 25 minutes or until the top is golden and crisp
While the bread is baking, chop the garlic and herbs and add to the oil with a pinch of salt - stir together and leave to infuse
When the bread is done, remove from the oven and spoon the garlic dressing over it immediately, while it is still hot - use a pastry brush or fingers to make sure it is thoroughly coated and that the oil/herb mix gets down between the buns
Serve fresh and warm, with soup
