Hi! They way these are twisted together can’t hold much filling (or else they’ll spill out), so if you’d like to put a lot of filling (let’s say a mix of sautéed veggies and tofu) you can opt to roll out the dough into round wrappers and pleat them like you’d make regular buns. Hope this helps and please let me know how they go! :)

Hi! Some people have tried it with finely chopped spinach that they cooked down first before seasoning :) haven't tried it myself but it should stick well to the dough and be wrapped easily too :)

Hi! I personally haven't tried it but have had a few people share with me that they baked theirs and turned out well. Of course they'll have a crispy crust on the outside and will turn out more like bread. :) hope this helps

It helps cook down the scallions a bit, so they're not completely raw when you're putting them in the buns. Also so that the salt and other spices dissolve, and are better absorbed by the scallions :)

Hi! I haven't personally tried it but a few people let me know that they did bake these and turned out great! They baked them in 325F for around 30 minutes. Please let me know if you try it out!

can i proof the dough overnight and shape them the next day?

Hi! I haven't tried leaving the dough to proof overnight for this recipe. If you do, best would be to let it proof in the refrigerator overnight then take it out the next day and leave it to sit for around 2 hours until it's in room temp before shaping the buns and cooking them. Please let me know how this works for you!

@@kaymizzai It would continue to rise, especially if you live in a place with a warm climate right now. But shouldn't be much of a problem (might actually be better and fluffier!) as long as you cook it within the day! :)

Is it ok to use bread flour in this recipe? It's the only flour I have right now during quarantine. Also, is it ok to bake them in the oven or do they turn too dry?

Hi! I personally haven't tried bread flour for this recipe. But it's usually a 1:1 substitute. It may just turn out a bit tougher and less fluffy if with bread flour because bread flour has more protein. Some have baked this recipe and it has a lightly browned crust, which turned good too, just a bit more dry. But if you're using bread flour then it might work better if you bake them so you have a crisp crust. Please let me know if you try them out :)

Hi! I haven't tried it myself but I wouldn't recommend substituting with a 1:1 ratio. Would be best to check depending on the type of flour used!

Oh no is it the type of sticky that's difficult to knead? it might be too wet at the start so you'll have to keep kneading until it starts to come together. If it's still to sticky you can add in a bit of flour. Hope this helps!!
