I just tried this recipe and it turned out so delicious. It was my first time making steamed buns so this recipe was foolproof! The rolls rose beautifully, and the texture was just perfect. So simple and will be making more tomorrow, since my family loves it. One quick note was that I only had active dry yeast on hand (rather than instant yeast which the recipe calls for), so I made sure to put the yeast + sugar into warm milk and let it proof for 8-10 minutes.

I made these tonight, using oat milk (malk) instead of milk, and Miyoko’s vegan butter instead of dairy butter. I cannot eat cholesterol due to my gall bladder. Oh. My. Gosh!! I put one of the scallion buns in a bowl and added Japanese curry over it, and I’m now in a food coma... Thank you SO MUCH!!

I usually make about 6-7 flower-shaped bun in advance and put them to the fridge. And those cuties will become my breakfast during the next one week.

Good thing I checked my yeast - I noticed it was not foamy after stirring so I started over with a new pkg from the store- mine was not as pretty but came out so good- it proofed perfectly -and steamed perfectly- was so delicious!

I'm starving. Every time I watch your videos, even if I've just eaten, I always end up starving. I love your cooking. Just a tip on the proofing: you can avoid the worry of different proofing times by putting the all the buns into the steamer at the same time. Just have the first batch wait on the counter while you make the second batch. There will still be a time gap between the batches, but it won't matter as much if you keep them out of the warm steamer until they're all together.

Thank for your recipe sharing! Tryed this (first recipe, half dosing) with modification(avoid milk and its products, lack of fresh scallions, without sodium acetate) : 3 percent hot boiled water with sunflower oil emulgated with blender. Couple of freezed scallions and spoon full of cut and air-dryed scallions applyed dry. I've steamed it in a pressure cooker same time you tell to do. And like the result.

Thank you for such detailed and delicious recipes; you are so great at explaining in detail not only the steps involved but a bit of the history is each dish, along with your own food memories. It makes each dish less daunting and more personal. I’m going to make these this weekend. I am probably the only person who doesn’t own a stand mixer, so I’ll definitely get a workout kneading the dough! That’s okay, it means I can justify eating more than one because I burned so many calories making them.

You can use all purpose flour and vital wheat gluten to make a bread flour. I make a lot of whole wheat bagels and I can't find whole wheat bread flour. So I bout some V.W.G in order to add the gluten necessary for a chewy bagel

I had so much fun making these. I've made your popcorn chicken and biang biang recipes as well. So delicious, and my roommates go crazy when i toss on my apron and break out the flour lol. I didn't have scallions or the sichuan pepper salt mixture, but i did have sichuan pepper, garlic powder, black pepper, basil and a light brushing of yakitori sauce. For the other half, i made cinnamon sugar instead of black sesame sugar. The results of both sets of rolls had me dancing in the kitchen! Can't wait for your next recipe!
