Pancakes with bacon and maple
Ingredients
- 260g flour
- 500ml buttermilk
- 2 eggs
- 2 tbsp caster sugar
- 1/2 tsp baking powder
- 1/2 tsp bicarb soda
- Pinch salt
- 50g melted butter plus 20g for cooking
- Bacon, maple and butter for serving
Method
1. In a large bowl add the flour, sugar, baking powder, bicarb soda and salt.
2. In a separate bowl, whisk together the buttermilk eggs and melted butter.
3. Add the wet to the dry ingredients and mix until just combined. Don’t over mix or they won’t be fluffy, small lumps are ok.
4. Heat a fry pan over medium heat and add some melted butter.
5. Pour pancake batter onto the pan one at a time, dont over crowd the pan.
6. Cook until bubbles form on the surface, then flip and cook until golden brown.
7. Serve with bacon, maple syrup, and additional butter.
