Pancit Bihon with Crispy Pork Belly
This Pancitrecipe with crispy pork belly is also known as "lechon kawali", is made of rice stick noodles or bihon, cooked in flavourful pork broth. Topped with stir fry vegetables and crispy pork belly.
Pancit also spelled pansit is a classic Filipino dish made of various noodles, stir fry vegetables with meat or seafood. Introduced to the Philippines by Chinese immigrants over the centuries. Inspired and adapted from their popular stir fry noodles like chow mein.
The popular pancit recipe is made of rice stick noodles or Bihon. Not like the Chinese traditional method of preparing noodles. The noodles are soaked and cooked directly in the simmering flavourful broth.

Ingredients
250 g rice stick noodles
1 to 2 tbsp soy sauce or to taste
1 tbsp oyster sauce or to taste
1/4 tsp ground black pepper
1 lb pork belly
pork belly rub before boiling
2 tbsp vinegar
1 tsp coarse salt
For the stir-fry vegetables
1 tbsp cooking oil
1 onion chopped
2 cloves garlic minced
200 g cabbage shredded
100 g carrot julienned
100 g green beans sliced diagonally
100 g peas strings removed
1 tbsp soy sauce or to taste
it 1 tbsp oyster sauce or to taste
1/4 tsp ground black pepper
For the pork broth
1-litre water
1 onion quartered
2 cloves garlic smashed
2 stalks celery cut into 4
5 stems of parsley
2 bay leaves optional
1 tsp whole black peppercorn
1 pork bouillon cube
Spice rub for the pork belly
1/4 tsp salt
1/4 tsp ground black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
