Recipe :
Aloo Pyaz Paratha
Preparation Time: 10 minutes
Cooking Time: 3-4 minutes
Serves: 2-3
Ingredients:
For the dough:
3 large potatoes
2 green chilies
1” ginger
1 small onion
2- 2½ cups whole wheat flour
1 tbsp oil
1 tsp kasuri methi
1 tsp red chili flakes
1 tsp salt
For the topping
½ cup finely chopped onions
1 tbsp finely chopped green chilies
3 tbsp finely chopped coriander leaves
Red chili flakes
Ghee/ oil as required
Method:
Peel and dice the potatoes. Wash well and grind to a smooth paste with the green chilies, ginger and the onion.
Add 2 cups atta, salt, kasuri methi, chili flakes and knead to a smooth dough. Add more flour if required. Add 1 tbsp oil and knead till a smooth dough is formed.
Break the dough into equal sized balls. Dust with flour and roll out to a paratha of desired size. Top the paratha with chopped onions, green chiles, coriander leaves and press into the dough by rolling it again.
Cook on a medium hot tava till golden and crisp. Add oil and crisp the parathas.
Remove form the tava. Apply bitter on the paratha and cook over naked flame till golden.
Serve hot.
