Yea, unfortunately a lot of the panko sold in the US is not great (even the one from Kikkoman). I used to get imported dried panko from the Japanese grocery when I lived there but finding fresh panko when I moved to Japan was a game changer.

Interesting technique for making panko without a food processor! It does look like a little more work, but it's still a great option for anyone without a food processor or for someone who doesn't want to spend the money on one. 👌👍

Thanks! I think the main difference between panko and western breadcrumbs is that it's shredded rather than crumbled, that's why a cheese grater works pretty well.

​@@NoRecipesOklahoma City has a great Asian market. Will have to look for Japanese bread next time I go. Would it be okay to add spices and/or herbs to the bread crumbs? Also looks like the Japanese bread would make a great egg salad sandwich. 😋

@@oksalbright Other places in Asia like Hong Kong, Taiwan, and Korea make a similar sandwich bread so you could look for those as well. As for seasoning the breadcrumbs, we don't traditionally do that for Japanese cuisine, but I often use panko in place of western breadcrumbs and I love using it for things like Chicken Parm (with minced rosemary, garlic powder, and parmesan cheese mixed into the panko). Nice idea! I sometimes add ingredients like parmesan cheese or garlic powder to panko before using it to coat food to add some extra flavor.

Hello Mark how you doing is your friend Nicholas and Southern this is great because for a little box of panko crumbs they cost about $3 but with this I can make my own panko cheaper and my question to you is does it have to be Japanese sandwich bread or can I use regular white bread and maple cook I see that you're in there too so how you doing what's going on up there in the great white North LOL anyways I got to go I'll talk to you guys later thanks for the I really like that anyways later guys your friend in southern Nevada

Hi Nicholas! Panko get's it's unique texture from the texture of Japanese bread (which is chewy like the center of french bread, but soft and fluffy like sponge cake). This unique combination is what makes it crispy yet fluffy when fried. I've had bread in the US with a similar texture though so it might take some experimentation but I'm sure it's possible to find something similar. Korean and Hong Kong-style sandwich bread is also similar and can be substituted.

Thank you sharing. How to make the color of panko a bit yellow? Coz i never deep fry my food, instead i use air fryer.

The panko gets yellow when you use it to coat food and then deep fry it. You don't need to give it color in this step or it will get too dark when you cook the food you coat with it.

cool. theres a low carb version of this white bread in japan....i will try this out though since we dont have ovens, i am stuck using my microwave/oven/grill. since the heating element is on top, should i cover the panko slightly to avoid it browning?

You don't need to use the oven unless you want to dehydrate the panko. I prefer using the panko fresh as the moisture in fresh bread helps puff up the panko and make it more crispy.

All Marc suggests on the blog is, "If you can't find Japanese sandwich bread, fluffy white bread with a soft elastic crumb will do the trick." I think a high-quality sandwich bread should work, like a potato bread or buttermilk white. (Marc lives in Japan, so he doesn't have access to these.) I like to use San Fransisco Sourdough because it has that chewy, elastic texture. It does add flavor to anything you make with it, so it might not be good for some uses. Good luck with your panko! I won't go back to the boxed stuff after trying this.

You can dehydrate the breadcrumbs in the oven if you want to store them long-term but I like using them fresh because they end up crisper.

You can make breadcrumbs from any kind of bread, but it won't have the same texture if you don't use an Asian style sandwich bread.

I've never tried it but it might work. My only concern would be that brioche typically includes some sugar which may cause it to brown prematurely.

This is not panko. Real panko is cooked in a special oven that uses current to cook the bread, the result is thousands of tiny air pockets which serve several purposes.

Panko just means "bread crumbs" in Japanese, so even western bread crumbs are a type of panko. As for the process you describe, it's the modern process used to mass produce panko because they can make the white part of the bread without the crust this way (less waste). The texture of panko comes from the type of dough used to make Japanese sandwich bread. Good tonkatsu restaurants here in Japan make their own panko from sandwich bread using a similar process to this.
