What an interesting video to watch & hear you both review this challenge. I was especially impressed to hear Dan say that he feels better health wise without the junk food. Everything you both voiced is a great affirmation of why we should all try harder to live more purposefully…even if we cannot do it on the scale you do it. Through this video, even though I am 80, I can imagine things that I can do to be less wasteful on several levels. Thank you so much … you offer so much “food” for thought with each video you make. My mother and grandmother and I have made noodles for years. To make the process faster all you have to do is let your pasta sheets dry under a tablecloth or small piece of sheet for a few hours. Turning them once in a while until they are the consistency of leather. Flexible but somewhat dry. Stack them all, roll the stack, then slice through the entire stack with a sharp knife on a cutting board the width that you want them. Shake out the slices of cut noodles onto your tablecloth and allow them to dry or cook them immediately. By having flour on the board, they will not stick.

I love different accents. All of them. Living in the United states in the midwest, a few hours from Chicago we hear all kinds. I live in Springfield, Chicago is 4 hours from me and we don't even sound the same. We were lucky enough to go to Ireland about 10 years ago, I was outside at a pub chatting with people and they just kept asking me questions so they could hear me talk! They said they loved my accent. I have no idea what I sounded like to them. But, several people gathered just to hear me talk ..kinda weird, but, true. There was plenty to talk about because I live in the land of Lincoln. So many questions. It was hilarious. My 15 minutes of fame I guess. 😂

Omg my heart skipped a beat when you were in the truck!! So glad you’re both ok!! 🙏 It was so interesting what you were both saying earlier in the video regarding your pantry challenge and the unexpected reduction of general waste. I can totally relate to this right now. This year, in an effort to reduce waste, eat healthy and live on less, I’ve challenged myself to live on British WW2 rations for the whole year. No take out, everything made from scratch etc cooking traditional wartime recipes from the 1940’s. I’m only a month in and I can already see a huge reduction in waste! It’s really opened my eyes. I’ve also started my first KZbin channel to document the whole endeavour, another eye-opening experience! I discovered your channel in late 2022 and I’ve been hooked ever since. You do such an incredible job, I honestly don’t know where you find the time & energy to produce as much amazing content as you do when you’re running a farm and household! Hats off to you, I look forward to every post and I’ve learnt so much from your videos - thank you so much! Jake x

You two are AWESOME! ♥️ Chelsea, first year I did the pantry challenge , my home is in a woods/country area, not close neighbors, so I told myself - way back when they couldn’t run to the store, or order out 👍 that’s when you have a grab night 😄. Grab a sandwich or warm up soup etc. Many times from my childhood I remember asking Mom what’s for supper? She’d say it’s just grab night dear. I don’t buy much from the stores anyway, - coffee paper towel and such you can’t grow BUT my children are grown with families of their own so my garden growing lasts much longer for my household The more rustic I can have in my life the happier I am

I was very much surprised by Dan saying that even after a month he felt appreciably healthier. I am guessing here, but I would have thought you guys to be in top five percent of the general population for eating and living a healthy life style. I lived in Canada most of my life. Moved back to the US to join the Navy. I say paste and other words like you. Everyone says I say it wrong all the time. .when I watch a Show from Canada I show people so they umderstand I am not crazy.😊

If you chill the dough and then let it dry out a little in sheets, then the blade works perfectly. The way that we do it is we roll out 2-3 sheets and leave it on the counter. Then when all of those are rolled out put the first one through the cutter. Then roll one, cut the first one that was rolled out. I feel like that was a poor explanation but that is what works for us. Then you need a little flour on the machine but not as much.

So, I have made a ton of pasta. I started with an Atlas but ended up with bursitis in my shoulder and finally upgraded to the KitchenAid attachment. I flour in between each run through. And that way by the time you get to cutting it, it is not gummy. Also, when you put it through the cutter, I do it slowly and have no problem. Good luck.

We found that intentional bulk shopping every 4-6 weeks saved us over a thousand dollars a year or more. Sometimes we stretch it to 8 weeks. 😊

We Irish pronounce pasta the way you do. The Americans have got into the habit since the fifties of adding w to every thing. Pawsta, pecawn, marscapawn etc.😊❤

Love that you are doing this together ! One thing I am surprised no one that I follow is doing is making the investment into a good chamber sealer. I bit the bullet a few years ago and best investment I made. I make so many boil in bag items for the times I need convenience or just do not feel like cooking. A few things I have done…..mashed potatoes,pulled pork, brisket, turkey in gravy,beef in gravy, taco meat….it goes on.. all I do is put the bag in boiling water to heat through. The smoked meats are fantastic! If I don’t have time to can my pasta sauce freeze it in these bags!

After my mom passes my dad found love again with a lovely lady from Victoria. I learned a lot about the difference between Canada vs the usa paaasta vs pasta is one, another is “ I’m going to have a shower” and we say take a shower.

One of the things I've found when making a BIG batch of pasta, it to roll ALL my sections of dough on the #1 setting (or whatever is the widest setting one your machine). Then do ALL of them on #2, then #3, etc until all your sheets are complete. This reduces the number of times you have to adjust the setting of the rollers, which is the part I find most tedious. I know many won't think that's a big deal, but when I cook for holiday, our family is 6 adults and 2 kids (so far!) and I end up making 3-4 batches of pasta dough.

You say pasta like we do in the U.K. Chelsea. Gosh, Dan was lucky with the truck, that could have been very nasty. My heart was in my mouth watching the rescue too, that road looks lethal in the bad weather! Love watching you from across the pond. We retire this year so hoping to make more use of the garden to grow more of our own food. Wish us luck! I’m also going to be doing lots of waterbathing to preserve for the winter where we can, as well as jams, pickles etc.

You can always have a tomato soup and a grilled cheese that’s easy I know you got tomatoes canned for days and you got milk, tomato soup, milk, and tomatoes thickened a little. Toast some bread put some cheese on it and some butter that is a really good meal Easy too.

Twice a week let the kids look through a cookbook and pick out a few things that look good to them. The kids can learn some basic techniques and be a great help to you now and them in their future. It’s a great way to experiment and it takes the guesswork of meal planning out for you.

Our ice storm a couple weeks back was awful here in Central Oregon, so I can empathize with the skating rink that your poor driveway became-we’re pretty used to snow and packed snow, but ice is no fun! That footage of the near miss with the truck gave me the chills. Thank goodness Dan is okay, and the truck survived. Yikes!

This is my first year participating in this challenge and I only committed to January and I have been staying within my rules that I imposed and my budget definitely has been better. And I am so glad you did this review process with Dan. I know being on camera isn't his favorite thing but I am particularly grateful to hear his viewpoint on things like this. I think he articulated the added value of the farming very well. I am not a gardener by nature and am only doing it to save $ but I do like canning and bulk purchasing. I only have 5 in my family but my husband and I both have a lot of health issues that has made it worth making the lifestyle shift in what we put in our bodies. I also didn't think about the waste factor. We didn't limit ourselves on eating out, but I have noticed that with my planning and deliberately using up certain items in the freezer and fridge in different ways, I am overwhelmed with how much food we actually have in stores AND with all the planning and purposeful usage of items, I am finding we aren't going out as often or using convenience items. I have not altered what I'm growing in my tiny garden this year, but I am finding things that I want to make sure I can up and how much I want to have more convenience-items in my pantry that are more homegrown/canned and has made my bulk meat and Azure orders more spread out and with more intention on quantities of items that we definitely use and ones we definitely don't need to buy in bulk.

Chelsea thank you for showing your cutting method My aunt made pasta quite often and she would oftentimes she would use the cutter on her pasta maker to cut the pasta in strips and she would sometimes do a real skinny pasta almost like spaghetti with and also the wider like store-bought wide egg noodles but I love to seeing how you cut those strips I don't know that I would have thought to roll the dough up and then cut it I think I probably would have just cut it into shorter lengths and then tried to cut it in one strip. The way you did that made it so much simpler I'm going to remember how you did that so that the next time I'm making pasta a small batch and not having a cutter that that I remember how to do that.

Chelsea, since you are missing the fresh fruits and vegetables (in the winter time) maybe you can adjust the budget to allow for only for those things to be bought. Also, see if you can satisfy that by only going twice a month, and if Dan is more disciplined to sticking to the list, letting it be him that goes to the store.

If you enjoy homemade pasta, you should totally try making perogies! Basically a pasta pocket stuffed with mashed potatoes and whatever else you want to though in. Onions, cheese etc.... I'm sure your family would love them. We like to lightly fry them in olive oil and serve with either butter or sour cream. Yum!

So sorry you were sick, hope you feel better now. We got a pork belly from our local meat market and we cured ours for 7 days, took it out let it soak in water for 2 hours then air dried overnight; we then smoked ours in our pit boss pellet grill till internal temperature reached 150. It turned out wonderful. We sliced it on our meat slicer and I packaged it in my food saver bags and put in the freezer. This was our first time and had so much fun and loved the end product that we can’t wait to do it again 😊. I adore how you say pasta my sister in law that lives in montana says it exactly like you so. Have a great week.
