Christine, for the plant-based mixes you don’t enjoy as much as other mixes, try using melted real butter in place of the oil. It makes a huge positive difference.

I’ve made chicken and rice for over 40 years. I add an envelope of Lipton’s onion soup mix or 1/4 cup in bulk. If I don’t have the onion soup mix , I don’t fix the meal. We found this gives it a great flavor. When my daughter in Portland visits me, she gets the soup mix at Winco out of the bulk bins and puts it in her suitcase. Give it a try the next time you make this. You can do the same thing with pork chops. They come out nice and tender. Debi in Vicksburg, MS. 🥰🥰

This girl from Maine (land of the wild blueberry) was SHOCKED at the idea of “never making blueberry muffins except from a mix”! Guess it all depends on where you live, right? Each year when they’re in season, I buy quantities of local blueberries (the little ones) and freeze them in ziploc bags to put in muffins, oatmeal, and pancakes through the long Maine winter. Bottom line, whatever produce you can get locally, buy it in season, enjoy, and freeze/preserve the rest!

Totally separate note: and please no laughing at or ridicule-Christine, I don’t know how y’all do it. How do you stand the cold? I grew up in Florida (yes warm almost always) and have lived since in SC and now in GA. We don’t have truly cold winters-a day here and there. This week, for us, will be miserable. I’m miserable today with it being 20’s at night and 40’s during the day. Friday will be a high in the morning of low 40’s dropping to 20’s in the afternoon and 16 at night with winds 20-30 mph with gust over 35. Saturday basically the same. How do you keep from feeling like you are freezing all of the time? I mean seriously! I told my mother Friday and Saturday we will be in the 3rd ring of polar h*ll and since I have an appt Friday I gotta keep from freezing!
