Panzanella elevated to the highest level! I want to return to Italy myself......It has been too long! I used your recipe.........this is no joke.....simply perfect! The textures and the marriage of flavors are brilliance! But FONGOOL to the guy in Italy! The Reggiano was like a blanket of sweetness! I also got disgusting and served it with a delicate hug of cerignola olives and my favorite white anchovies. Don't judge me.....I'm a salty guy! LOL.......Thank you for this! My new go-to!!!

You are one of the few chefs that puts capers in panzanella. I have been making this for years and my original recipe calls for capers. For me it is a must. Like you I also started toasting the bread for some crunch.

I've been making the same version of panzanella for about 20 years (including the shaved parmesan), but still watch cooking videos in case I might learn something new. The fresh peppers are a great idea, though I don't have any on hand so tonight I'm going to add some jarred pepperoncini. Thanks for the tip!

Panzanella is my absolute favorite salad. I call it "the salad for people who don't like salads." The flavors & texture are simply amazing. However, I finish it with a Balsamic Reduction. It goes from awesome to absolutely INSANE!

Awesome looking salad with what looks to be with tons of flavor brotha... I'm not a fan of oregano and parsley, and that's funny cause I'm hispanic but I just don't agree with those 2 ingredients.... Awesome salad though👍👍 personally I use cilantro instead of parsley and cumin/comino instead of oregano.... Awesome video brotha👍👍

Sidenote, after 20 years of nursing- I sold everything and moved to Florence -was there probably about six months -took some culinary classes -fell in love with the city, the people , the food.

"Migas" is a pretty stereotypical dish from central Spain that seems to run along the same lines, and was developed for the same reason. I think it's basically stale bread, a little oil, plenty of garlic, and whatever vegetables you have on hand ;)

I don’t like raw tomatoes either so I simply halve them and throw them in the oven with some salt and olive oil for a few hours at a very low temp. The end result is a slow roasted, sweet, flavourful tomato that doesn’t have the weird texture for raw tomatoes 🍅

Instead of using a cucumber you should try to use cocomero (no not the watermelon. I don't know the English or even the real Italian word, that's how we call it in my family). It's a cucumber-melon, that tastes a little less watery and would give even more crunch to the salad.

You can actually triple it and add in other rustic type ingredients...like drained salmon or drained tuna...maybe even boiled eggs chopped. I don't know about you but I look at food as an adventure and way to keep my temple ( body ) satisfied. It's all about making a dish your way with style and taste.

Because it’s not in the recipe normally, and Italians don’t really subscribe to the notion of the “customer is always right”. It’s very much part of the Italian experience.
