Panzanella is my favorite to make! I find the riper the tomato, the more juices you get. ❤️

Is that common to leave the skin of the cucumber on, I’ve been skinning mine for years with a carrot peeler

Try to get a thin skinned variety and one without prickly spines. I like English cucumbers the best as they are quite thin skinned and very few, soft, tiny seeds.
