I've made Michael Symon's Parmesan Gnocchi three times now and it gets easier every time. Tonight I'm going to incorporate some smoked brisket I made into his gnocchi dish. Wish me luck.

Elena 2011 I was just watching a documentary yesterday on on home cooking in Italy and traditionally ricotta and parmigiana is very common. In fact potato gnocchi came much later which are more cost effective but there a lot of families who choose this traditional way. My family included which is from Naples.

John Crain you can boil them, it only take a minute or two! And you can even pan fry after boiling :)

In the March 2011 issue of Food and Wine there was an ad for Mike Symon's ricotta gnocchi with brown butter sauce and gnocchi. I saved it for years but its gone missing!! Does anyone have this original recipe?? Would love a PDF or photo of it, but just an accurate copy-down of the directions would be incredibly well-appreciated. Peace and love, K

everyone says this guy "sold his soul" or is a "sellout" to wisconsin cheeses.... have you ever tried the wisconsin version of your favorite cheese? yes, there is a reason. it is the best cheese possibly in the world.

@elliotphotography chef symon explained the problems with traditional gnocchi and why he uses the ingredients he is using. he never said this recipe was traditional, not everyone has to make food like they do in Italy, you do not have the monopoly on good food

Wisconsin Parmesan ? Impossible... Its a protected cheese. Only Italian Parmigiano Reggiano can be sold under Parmesan.

WTH?? here in Italy we will NEVER EVER EVER make gnocchi with parmiggiano and that chees is absolutely NOT parmiggiano! Pamiggiano is very aged and that looks soo young !!
