Hello! My name is Alexander, I'm from Russia, I'm not sure that the maestro himself will read this text, but I would really like to thank him from the bottom of my heart for his recipes and video lessons about cooking pizza and many other Italian dishes. Over the past 10 years, I have raised the level of my pizza so much that I may have surpassed the teacher himself, no matter how bold it sounds! I love to make polenta! I make it with tomatoes, mushrooms, and Italian sausage as a tradition every Christmas Eve! In Italy they would make it then and it was considered the famine meal before the feast on Christmas Day!

I've used the rind of parmigiano reggiano many times when making pumpkin soup. Never thought of stock; that's such a brilliant idea.

È un piacere speciale vederti Gennaro. La ricetta è superba e noi in Romania facciamo la polenta (mamaliga) ci sono molte ricette, soprattutto nell'ovile dove i pastori la fanno al meglio. Mi mancano Antonio Carluccio e "Two Greedy Italians". Ti auguro la massima salute! E o placere deosebita sa te vad Gennaro. Reteta e superba si noi in Romania facem polenta (mamaliga) sunt multe retete, in special la stanele de oi acolo unde ciobanii o fac cea mai buna. Mi-e dor de Antonio Carluccio si de ”Two Greedy Italians”. Sanatate maxima iti doresc! It's a special pleasure to see you Gennaro. The recipe is superb and we in Romania make polenta (mamaliga) there are many recipes, especially in the sheepfolds where the shepherds make it the best. I miss Antonio Carluccio and "Two Greedy Italians". I wish you maximum health!

About 10 years ago I was on a late train from Luton airport back to London. There were only three people in the carriage. Myself, Gennaro were two and another gentleman travelling alone. I decided not to bother Gennaro and leave him to his privacy, but I have always regretted that decision.
