just tried it, a little modification but was also delicious. I know you have a contract with parm. reggiano, but i added 50% of pecorino to the parmigiano, and it did give it an outstanding flavor. Keep it up Gennaro! Luc

Love to see Genanaro back❤ A lill bit sad that he slightly gained weight and looked a bit old. Still love YOU SIR! I hate that “but” but still gotta say it. But the recipe is em.. weird yet. And I’m not even Italian. Once I hear “the environment” I have that feeling of some ideology prevailing over sense. Besides all the other (obvious) reasons beans ARE NOT quite healthy food. Durum pasta is what really healthy food

Bean carbonara is not carbonara. The other problem is that carbonara is made with pecorino. Yeah I know you can make with parmegiano regiano and grana padano too, but come on, real italian recipe is with pecorino. You can invent new recipes then and only then if looks better than the previous one. In this case, this is not fulfilled brothers. :)
