@@jamifitz you can as long as it's a thick metal, I have some good stainless bowls here but they are kind of thin so sometimes that can make the egg whites cook.

Hello! I was making my passionfruit curd and after cooling, I noticed the texture came out quite grainy despite being smooth when I took it off of the heat. Is this necessarily problematic and what are some remedies to counteract the grainy texture?

It does hold its shape for days! And it freezes very well too!

How do you get rid of the nipples on the cookies? When you tap your tray, I notice they don't go away, but when you pop the air bubbles, the nipples are gone? Thanks and I love your elegant cookies.

if the batter is at the right consistency, they should smooth out after a minute. If they don't smooth out it means you aren't doing the macaronage long enough.

You should make macarons with just egg white powder; no egg whites
