Chef Jean Pierre is the ONLY chef that explains in detail what he is doing. He is selfless in teaching and sharing knowledge. Other "chefs" just load videos to show off and make money. Nothing else. Chef JP is a true one in a million gentleman.

Chef. Because of you, cooking has gone from a chore to a pleasure. I do all my Mise En Place on the weekend ready for the week. Last night I did steak burrito, tonight was cashew chicken, tomorrow is 3 garlic soup then steak with pepper sauce after that. I put you on the TV in the kitchen and cook along side you. Looks delicious! One trick I've picked up for rendering the fat like this- add a tablespoon of water- The water will boil off, but at the beginning it will cushion the solid fat and lean from the heat enough to keep it from burning until you melt enough of the fat for it to take over the job. Works with salt pork, bacon, anything like that.

Perfectly Authentic. If anyone is making this recipe, Chef JP doesnt mention this on the video, but you need to eat/serve it straight away. Because you have to wait for the temp to come down to 180 degrees in order to not to make the cheese a stringy, clumpy mess, it doesnt have very long before the cheese solidifies again.

I did my apprenticeship in France and have run a French restaurant and cooking school for over 50 years. While I love and take pride in my Italian heritage, I could never call myself an Italian chef. My family and my friends, who are truly amazing Italian chefs, would never let me get away with it!😊❤️

Perfect technique! I have been making Gricia for years, but I always learn something whenever I watch Chef Jean Pierre! This time, the 180 degree cheese separation rule. I used to get my grated cheese from my local Italian deli - they grate it on a machine that looks like it is 100 years old. I also use my Vitamix blender. For Guanciali, Amazon has an arrangement with a supplier in New York’s Bronx Little Italy. They ship a whole cheek, perfectly packaged with gel packs. I break it down into 4 oz portions, vacuum seal and freeze. If you are on Prime, shipping is free. I can’t wait for your next video.

Love your videos, really really love them! I must say that I am very lucky to have a wife that loves to cook, but recently I started a bit of cooking also because of your videos. I always wanted to cook but never was any good at it, mostly missed the mark on the dish I wanted to prepare but a while ago I found your videos, your energy and charisma and the way you explain the process is astounding. And this last part is what I love about your videos as most cooking videos/shows show only cut down versions and most do not even make any effort in explaining why something has to be done the way it is. I can say that in last couple of months I did make some of your dishes and most were a success (i.e. first was kind of a miss, the second was quite OK, but from there on every dish was a success) and with each successful dish the desire to cook again is greater and this is what I really appreciate. Today I made Pasta Alla Gricia, we all loved it and there were no leftovers. Oh and coming from Slovenia we have quite some French cuisine influences so to the I can just agree! Keep up the great work and can't wait for your next video.

My absolute favorite roman pasta ♥ It's definitely the "sleeper" of the famous roman pasta dishes. Not as well known and not as rich (which I prefer) as Carbonara but insanely delicious. You gotta try this. If you nail that emulsion you'll be in heaven. And yes Guanciale is a must in my book 🥰 it just has that very distinct flavor which you can't replace. A good Guanciale makes the whole dish taste like SO much more. Roman pasta dishes have so little ingridients... it's very important each one of them is of good quality. You'll notice😊

Dear Jean Pierre, the only exception I take at your recipe is that I would take out the guanciale from the pan (and keep it by the side) *before* you make the pecorino cream. Once you have made the creamy sauce and added the pasta, add the guanciale on top of it. This way the guanciale is kept crispy and cruncy. Trust me! 😊

Chef Jean-Pierre, this comment is about your brownie video from a while ago.... They're simply AMAZING. Every time I've tried making brownies at home from scratch, they've been very "Meh"... either too fudgy or floury with little taste. I gave your recipe a try and both my husband and I were in awe. They're quite possibly the best brownies I've had in my life. I LOVE your videos, your dessert videos always look so elegant and make me extremely hungry, lol. Honestly, everything you make elicits hunger pangs. My husband and i watch your videos every night in bed and discuss which recipes we're going to try in the coming days. I'm so lucky being here in Melbourne, Australia, as we have multiple guanciale producers. One does a big once a year lot (Bertocchi), of the smoked variety, but the Queen Victoria Market has a few smaller suppliers that do other styles (flavoured, unflavoured, dry, soft, etc). I do a dish with a tomato sauce, guanciale, black olives, and mushrooms, that my kids love, so I'll definitely have to try this one.

My Dad used to make a similar dish but instead of Guanciale or Pancetta, he would bring home the end of the Prosciutto from his butcher shop and cut that up. I believe he had some onion in there as well. It was wonderful. I miss this dish and I don't have his recipe, so I will try your recipe using the prosciutto. Thanks, Chef.
