I've gotten the chance to meet Oreste and Adi last summer in Sicily. Seeing them together on a video that perfectly pictures the Sicilian cooking tradition, the love for genuine ingredients, and the passion of delighting beloved family members with such food is simply incredible. This video is a genuine, authentic, unfiltered piece of Italy.

@@pastagrannies Yes, it was. I had the chance to have a quite long conversation with them. Actually, Oreste has so much to say about his WWII times in Corleone. It would be amazing to capture his stories as well (on another channel for sure). In addition, Emanuela is the perfect example of how women can run a successful business in the Sicilian farmlands preserving the tradition and the love for authentic food.

I like to grow micro greens, sprouts sometimes, and herbs in small planters, like Italian parsley, thyme, oregano, etc, strawberries, edible flowers, all depending on the seasons. Good luck!

Anelletti are so hard to find in the USA, unless you are in the Midwest, where the Creamette's pasta company sells them in two sizes, thin for tuna salad or macaroni and cheese, and thick for cooking like this. Creamette's pasta is made from hard durum wheat from Minnesota and the Dakotas, and has a very nutty flavor, unlike any other brand. They used to be made in Minneapolis, which also meant hard, mineral water from the Mississippi. Still, they have maintained the quality. They simply call these Rings. When you put them in a tuna salad, they have a way of lightening the dish, making it more airy, which improves the flavors.

It looks so delicious! When I was little, my mom made these Christmas cookies that were like biscottis, but she called them pastuda . She got the recipe from her best friend that was Italian. The cookie dough was rolled out and a chocolate and rum, walnut mix was spread and then another layer. Baked then wrapped. We made them at Thanksgiving and couldn’t eat them until Christmas. Does anyone else know of this cookie?

Ms. Vicky, a great recipe again, looks delicious although i've never heard of this dish name. Adi is another sweetheart pastagrannie, you just want to give them a big squeeze hug, lol. btw, Adi is a name you hear in Appalachia, but they are not Italian, but usually Irish, Scottish, or Scotch-Irish, & it is spelled Addie, or Addey, but Addie is the most popular spelling. Try it, I was weary first myself, but then I tried it once, and I have become a fan. For example, when doing lamb shoulder ragout with root veggies and a strong souther red wine, cloves, lime zest and a little forest honey add an interesting twist to the sauce.

@@roberthennel Those ingredients seem hardy enough to support the taste of clove. Normally the only time I have used cloves in savory foods was when I made ham (I would add a little bit of clove powder) or in Indian food. It's not my favorite flavor normally.

@@kamikazitsunami In my country (Slovakia), the traditionally "sweet" dish spices are often used with goose od duck meat (my late grandparents used to breed both for meat). I really love slow-roast duck breast glazed in a honey-cinnamon-orange zest baste served with caramelised red cabbage cooked on orange juice and a side dish of bread dumplings

@@kamikazitsunami To be honest, our traditional cuisine is much more simple, mostly potatoes, pasta, bread, sauerkraut, beans and dairy products and smoked meat products (similar to the Italian Cucina Povera, but with fewer ingredients, as we live in a colder climate with no sea). And a lot of very hearty and stodgy soups (in English, I would rather call them stews) ate with bread. The goose/duck recipe is traditional around St. Martins Day. Our cuisine was influenced both by traditionally Slavic (dairy products, pasta - pierogi, halušky /similar to gnocchi/, as well as Hungarian cuisine (goulash, sauces), Czech cuisine, for example, is much more influenced by German cuisine. My grandma was a professional cook and had six kids of her own, so she was very passionate about cooking and taught me how to relax while cooking. The only issue is, she taught me how to cook for six to eight people 🤣

To people who think "but that's a pasta plate, a first course, how can you eat the second dish after, it's a lot of food" it's better to explain well; thats in Italy is called "single dish" (sorry, I don't speak eng, I don't know how to say it better) *you eat only that* accompanying it with a light second such as a salad/vegetables (sometimes, sometimes not), fruit&dessert and coffee.
