I'm Italian and watching all these incredible videos with all these incredible nonne is making me so emotional. They all remind me of my own nonna, who makes gnocchi lunghi as well! She's from a small village, south of Rome, and there gnocchi lunghi are called cove surici, which in their dialect means mouse's tails! Just thought I would share this fun fact. Keep up the good work, this channel is truly a gem.

I'm not italian and I have no Italian roots but I learned how to make pasta by hand 7 yrs ago and this gives me inspiration to continue doing it. There's something unique about handmaking it, even though I do have a manual operated machine now, I'm super fascinated by different shapes and flavours! I have probably watched 100 pasta grannies now, and I have yet to see a chef's knife (at least I don't remember one). Those "nonna knives" would drive me crazy, but the food...

I have exactly the opposite problem, my grandma taught me to cook and she also used a small and thin knife. I have a wonderful Damascus steel chef's knife, which I got as a gift for my 30th birthday, yet I still prefer using the little thingy my gran used for most of the stuff. It must be 40 years old, half of the blade is gone from all the years of hand whetting. the wooden handle is cracked, but I just got used to it too much

Just made this from the cookbook. AMAZING. Yes, it sounds delicious, but whatever you’re imagining pales in comparison to the musky, salty, sweet combo once it’s all together. Roll thinner than you think. They contract and swell when you cook them. Keep tasting because can take longer than you think based on thickness.

Same in the UK. Supermarket eggs are pale watery rubbish. You really have to seek out some good farm eggs.

Find someone who keeps chickens that are allowed to run around and be chickens - it's a welfare thing, not a breed thing. Sad chickens = sad eggs. ...that said, make sure they're not lax about egg collection if they have a cockrel. Dumping half an embryo into your food isn't great if you're vegetarian, and certainly won't help you make pasta or cake.

D K Agree. In the U.S., try “pasture-raised” eggs instead. They cost almost twice or thrice more, but their yolks are almost always much deeper in colour, which also indicates its drastically different - and much BETTER - nutritional profile than conventional eggs.

D K I think the same thing - how wonderful their eggs look. Even if I buy the expensive free range omega 3 eggs here in Canada, the yolks look nowhere near as bright, but at least they aren’t pale and tasteless like the regular ones. Must be something they eat that they only have in Italy.

I am from south India. During my stay at USA for 10 years.. Italian food made me stay happy becaz I don’t eat meat. I always go to Italian restaurants and order meal without meat. I can order almost all food by skipping meat part. I started liking Italy 😊. Olive gardens was my fav restaurant . These grandmas look like my grannies.. who worked hard like these granny yet shower so much love to all. I am glad I found this channel. By the way I am small youtuber. If possible support me too.

Granny is laughing at people who spend hundreds of bucks on Japanese chef knives including myself. She chopped up those zucchinis with a table knife while having a chat.

Love this. I started making pasta a year ago and I really love it. I also tried those gnocchi lunghi but my problem is when I try to rollout the dough by hand it's so slippery that I almost can't roll it. I always had to wet the surface a little bit... may be I use to much flour?

My guess is that it has something to do with the surface where you're rolling out the dough. If you have a smooth bench top or something similar the dough wont roll. Try using a wooden cutting board instead if you don't have a wooden table where you can work. If this doesn't work out it might be that you are using too much flour.....

im curious about the table they are kneading their dough on. do they wipe it clean every time, or is it okay to keep it floury because they make pasta so often?

@ Willa, if you make an egg less pasta, would be ok to re--use the board, unless you have cut meats on it. If you used eggs, meats, etc, take a bowl of hot water with some bleach added to thoroughly wipe the board with a rag, then use clean water to rinse well with a separate rag, i sun dry mine on the veranda/back porch. those nonnas who could afford it, usually have a dedicated table just for pastas/dough and usually kept in a back room/pantry just next to the main kitchen where they actually cooked and served the dish..... and usually a dedicated dry brush to brush the flour off. Any liquid or humidity will wet the flour left in those cracks if any, eventually will build up over the years... not a good way to clean that table. And some other people have a special large wooden tray/surface that has sides built up along the edge used only for dough, that can be placed on top of a table and stowed away later.

You can, several places sell it. I used to get it from a place in NYC on 8th or 9th Ave, I think they will ship. Search online. Or get a hog jowl (fresh) and cure your own. I've done it, it's not hard...

you are right; gnocchi are usually made with a potato dough, but pasta names are a bit complicated! in the south gnocchi can be all flour (see Giggina from Ischia's episode) or a mixture of flour and potato in varying ratios 😊 best wishes, Vicky
