What a great video. First, I love how she grows garlic (I do as well) and I loved the story about how she wore it in braids to sell it. And she still laughs at the memory. And then to hear about how she wasn't able to go to school- and yet, she's clearly educated herself in spite of. Sort of puts life in perspective. And then the meal.

what a lovely woman who went to the school of hard knocks. really spry and clear headed and knows her garlic. years ago I flew to see my mom and had a sack of homegrown garlic and fava pods/beans in luggage. I got stopped and had to open luggage as who on earth believed that anyone was flying with garlic and faves. and chicken and pasta looks delish. imagine making fresh pasta while the chicken is cooking. these women live healthy lives and eat really nice foods. great to see into their lives. thanks.

Just so you know fava beans can be extremely dangerous. There are people who are allergic to fava beans who can't even be in the same room as them without their throat closing up. Which is why in Italy supermarkets that sell them have signs warning the customers in the produce aisle.

Sounds like what my mother told me, the girls in the family would have to make bread a couple times a week before going to school, then they would bring it to the bakery, and they would bake the bread and on the way home from school they would pick up the bread and bring it home.

Mmmm, could smell that chicken cooking. Used to keep hens for the eggs & they would eventually end up in the pot [usually the soup one]. But sometimes I'd cook them like that. They'd had time to develop a lot of flavour eating totally free range. Like you say dense, though the uncharitable one might describe it as 'teuch' [tough in English]. What a great garden, alliums as far as you can see. They looked great too. Another great start to the weekend, thank you.

Actually, it's not only for the schools/education (and she mentioned she was not able to attend much classes at school, so not her case so far). She was born under Italy, and grown up in a predominantly Italian speaking environment, as child and teenager. That specific area of Istria ("Zone B" of the Free Territory of Trieste) become part of Jugoslavia, and then Slovenia, only after 1954. Until the mid 50s, Italian/Istrovenetian was still the main language in the area (Zone B/Northwestern Istria). Maria was pretty much an adult woman or at least a teenager, at that point. Thus she speaks Italian/Istrovenetian so naturally and fluently, at a native level. In addition, the municipality where she lives, Piran/Pirano, is still an officially bilingual territory nowadays (Slovene/Italian).

@@bumpypants3241 I'm glad for you 'bruh', if you're Istrian. Then, you must agree with what I wrote above. If you'd read it carefully, and understood it. I'd not been surprised to the contrary, tho. As I know a number of people in Istria who knows very little about the history and the culture of the region where they live. Not sure yet if you belong to such a group. But some of the claims and assertions you just made, are convincing me that you may be one of them... With that sort of nationalistic-like claims, you quite risk to offend and disrespect *half* of the native Istrians... I'm sure you didn't mean that, and perhaps you just haven't expressed yourself well enough. Cuz, if you do live in Istria, you should know very well that Italian - in fact - is *not* at all "mandatory" (btw, you do not need to scream the word in capital letters: we can still read you 'bruh'..) "for everyone in the region" (both, the Croatian and the Slovenian part), and it's *not* a compulsory subject in every local schools, but only in few. Nowadays there's plenty of people living and working in Istria without knowing and using any Italian so far, or just few words. They all still got a stable job. Same goes for the local, native, istrovenetian dialect. For instance, are yourself able to speak Istrovenetian fluently? As it's supposed to be "mandatory", right? The reality is quite the opposite in fact: Italian & Istrovenetian are falling out of use and slowly dying out in the region, especially among the younger generations. So I hope, indeed, they will include them soon as a *mandatory* subject in all schools of the region. Because they're also native languages of Istrian people, an integral and essential part of our culture, history and identity. Therefore, I confirm everything I wrote in my previous post, as for the *main* reason why a number of Istrian people is still pretty fluent and natural in Italian/Istrovenetian. Myself, my fam, my ancestors have been using this regional native romance language for centuries. Not cuz it was a compulsory subject at school, neither cuz it's been required to get a stable job... But simply because it's our mother tongue. And it has been so for very, very long time. Eventhough we're less and less in the region to speak it as a first language. In fact, it's quite in danger in the entire area today, and Croatian and Slovenian Govs are not doing much, not enough, to protect and elevate it.

It is a second foreign language (English being the first)and taught for several years to every child in the area. This is a fact and you can check this on the internet. Can you name a school where that isnt the case? Veneto, on the other hand, is a different story.

They are Croatian. Its the part of the region which was under Italian rule for a long time thats why everyone speaks italian there.

@@zojo1498 they're not Croats. In case they might be Slovenians. But in fact, you don't know. They might be Italian or mixed too. Simply, they're Istrian. Like myself. In addition, the past Italian rule, is not the main nor the only reason why we speak Italian. We also speak our own Italian /romance regional dialects/idioms here. We and our ancestors before us, have spoken this way for many centuries. It's simply one of the native languages of Istria, along with the Croatian & Slovenian local dialects.

Vicky, well when you choose a house for the show you go exclusively to pasta, you ask how are the lunches on Sundays, birthday, Easter and Christmas? I ask this because when my grandmother was alive, on Sundays and birthdays, after we got back from church, the house is full, children, grandchildren, cousins, everyone participated in the production of the first course, the second course and the sweets were brought by the daughters and daughters-in-law. ! At Easter and Christmas, all the food and sweets were made at grandma's house, that's why I ask about the sweets! About monasteries I've seen French nuns and priests showing recipes, and in Italy I've seen the community and priests in villages organizing the polenta party, or party referring to a patron saint! Sorry for the long text, lol

The fusi look like garganelli romagnoli, and also the maccheroni al pettine delle Valli Mirandolesi are similar and traditionally have a chicken’s ragú. Just a bit of sea and land between them…

La signora parla il dialetto della zona, che tutti i veri istriani conoscono e che, con qualche lieve differenza, si parla anche da questa parte del confine, in Italia. D'altra parte, fino al 19918 era un territorio unico sotto l'Austria, poi ancora fino al 1943, sotto l'Italia.

My girlfriend's family are from the south of Istria and when I have shown her your videos from Istria, she is adamant that they are doing it wrong! Her nona makes the fusi by folding the two opposite corners of the diamond over to meet then pinching them together, rather than rolling into a tube. Both ways I am sure are delicious but maybe the different varieties are from different parts of Istria? The Italian-speaking north vs the Croatian Istrian dialect-speaking south?

@Sam Green: I myself am from the Southern part of Istria, near the main town of Pula/Pola (Italian-speaker, btw). I confirm that the way displayed in this and in the other video (with several ladies from the town of Verteneglio), is the traditional/original way to craft Istrian fusi in the entire region. Actually, the name of the pasta itself tells us about it: "fusi" comes from "fuso", from which derives also the verb "affusolare". "Fuso" is the italian word for "rod" or "spindle". This pasta got this exact name cuz is made with such a tool (usually wooden) or something that resembles it. But it's true indeed that in several families, at least sometimes, no tool is used, and they roll & join/pinch two corners of the dough diamond just by bare hands. It's just a minor variation of the technique. None of these ways is wrong, of course. Nothing to do, I'm quite sure, with the different national/ethnic/linguistic demographic components of our region. As all these people have lived together in almost the entire peninsula (South, Central and North) for many centuries, mingling, intermixing, and widely sharing customs, traditions, habits, and culture in general: as cuisine, even more than in other fields. "Fusi" is a typical and original Istrian pasta, with a pretty old tradition in the region. We can find some similar preps (types of pasta) only in some other parts of Italy. The original influence is quite clear, therefore we can acceptably list it as "Italian food" (at least in a wide sense). Or even better, as Adriatic/Mediterranean food.

@@lucdebado thank you Luc for the information, very interesting. I've only been to Istria (Labin in fact) once and only know the Istrian culture from my diaspora in-laws. I loved the area and the food especially, Labin starigrad is beautiful, so I hope to learn (and eat) much more in years to come!

@@samgreen9389 my pleasure, Sam! I myself had lived Down Under (Melbourne) for 6 years. While there, I was quite involved w the local Istrian Diaspora. There's quite a large number of Istrians who settled in Australia, particularly after WW2, in the late 40s and in the 50s. Especially around Melbourne, in the rest of Vic, and in Adelaide. It's a shame that, at least in Mel, they're still divided in two organizations (clubs), one more italophile, one more regionalistic, with also few elements more philo-croatian or philo-slovenian. We've had a pretty troubled history, which for many natives doesn't seem to pass yet (it's hard for them to completely move on), unfortunately... But Istria is an awesome little land indeed, under so many points of view! A true European and Mediterranean gem! I hope you'll visit it again soon 😉
