Now the italian government is but a puppy to the EU commettees who favour big industries and are keen at destroying all local peculiarities. No surgical gloves, no cap, no sterilized kitchen, no stainless steel coverings, no sealed industrial ingredients............Home food is poison for the EU beaurocrats, they much prefer Mcdonads and such. (Italian Government following suite)

Why, why have I not known this channel way before? 😩 This is exactly what I’ve been looking for- real, authentic and handmade Italian pasta recipes. I’m not even Italian myself but I highly appreciate traditional Italian recipes. Not these weird modern recipes with milk, tons of cream or other things no one needs. I’m in love with this channel already. ❤️

What a great recipe video Vicky. I know you search out great grannies who cook from scratch, and you really can taste the love and effort they put into their food. I am beginning to think everyone in Italy can cook, may the grannies pass on their knowledge and skills to family and friends, and may it never become obselete. i am so glad you are able to catch these ladies in action. i fear that these recipes and techniques will not survive as so few take the time to cook from scratch. they are equivalent to oral histories. thank you very much.

Don’t worry: in Italy I have obliged my grannies and my mum to teach me how to do home made pasta, even if it is not so common for a male to do it, here. And I know a few of my friends that do the same to cook pasta abroad where they live now.

@@DonatoFaruolo Due to the virus, I was lucky enough to go to a wonderful outdoor restaurant just this week for linguine aglio e olio which is one of my faves. to luxuriate and have someone cook for me and take away the dishes was divine. I think I will take a rain check on your generous offer until the world gets a little healthier. cheers and have a much better year! I was lucky enough to have visited your wonderful country with such a sunny clime and people many years ago and fall in absolute love with Italy. my grandfather was from Rome and grandmother from Cosenza.

Great watching real Italian cooks at work. So often we hear you must 'marry the pasta to the sauce' by placing the pasta IN the sauce to "finish" on the stove. Yet, Granny after Granny simply dress their pasta with a little sauce over the top. Can't stop watching!!

hi Greg - that's true. Quite a lot of the 'condimenti' don't need pasta water. Violetta, one of our Grandmothers, told us pasta water was traditionally used to rinse the dishes. best wishes, Vicky

I adore these videos! Would you consider a video how to roll the pasta? I see these women wrap the pasta and roll. I’d have a horrific mess if I tried. Would love to see the technique

You need lots of room. My elders made pasta every week, and I learnt the tricks before I even started going to kindergarten. But my kitchen is too small. My grandma's set of board and big rolling pin is back at the old house in the country, where I can still make pasta for 12+ people almost effortlessly. But where I live, I have a small kitchen and my rolling surface is small and also a little too tall. Fine for pita breads and suchlike, but not really good for pasta. I could not roll out dough the traditional way if I wanted to. That said, another issue could be that you are working with a dough that is too soft. For pasta, you want a really firm dough. If it gives in too easily under your rolling pin and forms lots of creases and folds as you roll it out in a single stroke, that means the dough isn't firm enough. A good pasta dough is a dough that you have to apply lots of energy to before it agrees to be rolled out. You need a little time and patience, but with a properly firm dough you won't get a mess at all: it'll roll out gradually and evenly. I've seen the creases and folds from soft doughs happen with people who are unfamiliar with pasta making. So, lots of space and a really firm dough are key. Hope that helps.

Good question - whereabouts in the world are you? Because that will influence the answer! You are looking for a firm, fresh cheese - make sure it doesn't weep whey. I've found a fresh goats curd cheese which is nice, but if you cannot find anything, simply omit the romagnolo cheese and use a mixture of Parmigiano and ricotta (drain it first). best wishes, Vicky

@@ailiz7 I agree with you. Sometimes, less is actually more. A little butter with the flavor from the fresh sautéed sage is perfection. Too much butter would mask the flavors of the filling. You want flavors to complement one another. Not show them up. Isn't there an old song that says too much of anything isn't good for you?

I am always amused by your narration when you say "Grannie measures out 300 g of flour" and she's dumping it on the table. Did they ever use a scales....way back when they first began?

hi Judith, I know it's 300g grams because she's added 3 eggs! Rina dumps the amount of flour she knows will bring the dough together with the number of eggs she has - it's all done by eye and experience. I rarely see scales in a kitchen. best wishes Vicky
