Pasteurization process of milk

Pasteurization of milk can be done in two ways *LTLT(Low-Temperature Long Time)
*HTST(High-Temperature Short Time)

Machines are not 100% accurate. There are some heat losses and during the whole process, the temperature also fluctuate and lead to under-pasteurization of milk. For example If the machine is set to 72°C for 15 seconds, the milk will only be heat up to 65-67°C or maybe less. And according to definition of pasteurisation for milk "every particle of milk should be heated upto 72°C for 15s (HTST)"

one reason is that, if temperature is below 72 then FDV( flow diversion valve) bypass milk again to balance tank. so prevent this, temperature is kept higher than 72 so that FDV will not bypass milk and allow milk for forward flow
