I imagine all the stuff Claire makes is essentially what the original chefs intended to sell before their marketing person told them to make it as fast as possible, as cheap as possible, and let machines do it. Oh and make sure it has a shelf life much longer than edible things should have. Absolutely love this series.

for cake 3 1/3 cups cake flour 2 cups sugar 1 tbsp baking powder 1 tsp kosher salt 1/2 tsp baking soda 2 sticks unsalted butter 1 cup buttermilk 2 tbsp vegetable oil 5 large egg yolks 3 large egg whites 1 tbsp vanilla extract whisk together dry ingredients add butter, buttermilk, and oil and beat on medeum speed unitil smooth. add egg yolks and vanilla and beat again until smooth and light. whip your egg whites to stiff peaks and fold into batter use piping bag to fill molds 2/3 full. bake until risen and golden brown (about 20 minutes) for filling 2 large egg whites 1/2 cup of sugar 1/4 tsp cream of tartar 2 sticks unsalted butter 1 tbsp vanilla extract combine egg whites and sugar beat over a double boiler until mixture is thick and white and 160 degrees. whip until cool. add butter while beating on high a tablespoon at a time until mixture is thick and light, then add vanilla. transfer into bag with injector tip. flip twinkie over and squeeze evenly until you can see the twinkie expand

The world's problems aren't with food production, they're with food distribution. Population evens itself out with food, especially with the farming technology that exists now. More people means more farmers, which nowadays one farmer can produce so much more food than one farmer 50 years ago. Again, the issue doesn't have to do with how much food there is, it has to do with the lack of that distribution of food.
