I know this is late, but the reason Claire was experiencing 'better' Pocky and 'not-as-good' Pocky was because she was eating the Japanese ones and the Thai ones respectively. I know because I live in Singapore, where both are available, but the standard Pocky in convenience stores is closer to the Thai version (cheaper, more mass-produced etc), whereas the Japanese Pocky in general is more expensive but uses better ingredients (and IMO tastes better). Japanese Pocky has both the classic 'thinner' Pocky and the thicker premium flavours, while as far as I know the Thai/non-Japanese only has the classic. The Japanese matcha one is also FAR better than any other 'foreign' matcha flavour.

I've binge watched probably 20 of these Gourmet Makes episodes over the weekend (I'm quarantined, don't judge me) and I've gotten so I enjoy the roles of all the guests that trickle through. Like Chris is the supportive "You got this, you nailed it!" guy. Brad is the commiserater/occasional partner-in-crime. Sohla is the mother of chocolate who makes tempering look easy but you also know you will never get it. Amiel, Molly, Andy, and Carla are the siblings waiting in the wings to judge/eat when no one is looking. Gabby is the exuberant "I love everything!" person. Dan is the unseen older brother making things harder. Rhoda is the barely seen older sister who sets the rules. Adam sucks. And, of course, Claire is adorable.

Pokys are a HUGE thing here in Mexico. You can get them in any supermarket and in some stores you can get some weird gourmet ones (with almonds and nuts) I remember back in the day you could only get Pockys in manga conventions but now they are everywhere.

I still want to see Claire work with Ben Krasnow to create REAL POP ROCKS! I want to see a revisited episode and maybe they have to rent out a studio but Ben brings the recipe, Claire flavors them and they both cook a few batches together to create the real deal. Ben can explain some of the technical challenges but his original video already goes into so much detail and I think a lot of what they both do on their channels is the same just Claire deconstructs popular snack foods and stuff to rebuild her own (usually better) versions of them and Ben deconstructs sciency electronics and stuff to then recreate his own versions of things often for a fraction of the price that it would normally cost to build.

That sweet flavor she's trying to get? IT'S ALMOND. For some reason it's never listed in the ingredients because it's very second nature to simply use it in baking and pastry recipes over in Japan. No joke.

I wonder if that could cause health issues for people with nut issues! While it might be common practice in japan, it isn’t necessarily that way in America, and many people have nut allergies. (I have no culinary/ingredient listing experience) but I do believe in trying to present all the necessary information to avoid health complications in this situation

Ok, I'm just over 11 minutes into this video after binging this entire playlist. Claire Saffitz, you're awesome. This is a difficult endeavour reverse engineering things that have had so much put into them. It's a wonderful watching a professional work a process to do as such. The production team. First and foremost, whomever "Found" Claire should be commended. You produce a high quality video in a manner that is understandable and relatable to the average chef, when the source material is so much over engineered. In case that is too arcane. You're taking a product, that is over engineered by huge amounts of manpower and money, giving it to a relatable and likable personality and trying to work it backwards. It's a damn fun watch. This next bit is nothing to do with anything but sheer humanitarianism. Claire. You're more talented than you believe you are. You literally taking things that have had thousands of man-hours and millions of dollars invested in them, and reducing them to 3 to 10 day builds. That. Is. Impressive. Liked and subscribed.
