A common misunderstanding is that claire CANT temper chocolate but thats never really been true. She CAN temper chocolate, her problem has always been that she finds it very boring and very tedious and so she avoids doing it. Thats why now that she has the sous vide technique she is less reluctant to do it because it doesnt actually require her to do much with it.

This is absolutely one of the most informative "foodie" "science" shows on the internet. I loooooove these people!! The chemistry in the bowl and in the workplace is amazing.
