It shouldn't be for a pastry chef really. I don't think I've seen anybody on the Great British Bake Off fail at it - and some of them have trouble caramelizing sugar.

A common misunderstanding is that claire CANT temper chocolate but thats never really been true. She CAN temper chocolate, her problem has always been that she finds it very boring and very tedious and so she avoids doing it. Thats why now that she has the sous vide technique she is less reluctant to do it because it doesnt actually require her to do much with it.

Yeah but shes not the one who chooses what she's making and she's not the one doing the editing. Gormet makes is awesome and special because of Claire, but that doesn't mean that she is the one who is in charge of the production of the videos

This is absolutely one of the most informative "foodie" "science" shows on the internet. I loooooove these people!! The chemistry in the bowl and in the workplace is amazing. It doesn't hurt that they are so knowledgeable and so creative and not afraid to make keep trying until they get it "right on". They are wonderful and thank you all for a great show!!!
