Join pastry chef Claire Saffitz in the Bon Appétit Test Kitchen as she attempts to make gourmet Pop-Tarts.
But where do Pop-Tarts come from? Pop-Tarts (scilis erumpant) may be a childhood favorite of many, but their history long predates everybody who enjoys them today. First discovered by the ancient Kellogians around 300 BC (and not cooked -- or toasted -- over flame until 100 BC), they were originally found in nature in four distinct forms: apple currant jelly, strawberry, blueberry and brown sugar-cinnamon. Throughout the following centuries, the Kellogian empire would grow and flourish largely due to the cultivation and trade of Pop-Tarts. Today, Pop-Tarts are available in 30 different forms and the Kellogg empire lives on. I agree. I wish they'd take this approach from now on. I get that a frustrated Claire is a funny Claire. But in the past, it felt silly that they pitched the series as her making a "gourmet version" of something when it seemed most of the time she was bending over backwards trying to "dumb things down" so her recipe was indistinguishable from something that came off a conveyor belt. (Not only that, but the final procedure was completely unusable for the home cook.) This is the first time that I can remember where she approached the challenge from the get-go with the attitude of, "The original isn't very good. I'm going to improve upon it, and make it possible for someone at home to do it too."

I agree but while things should be better it should also recognisably be like the original. So a very close match, just obviously superior. Maybe they could start the segment with a nice long round table discussion about what specifically needs to be improved, I always like those bits but want a lot more.

The really important part is not just having it come out good, but being able to freeze them and reheat them and still be good. thats the part that screws everything up.

After Pop Rocks and Starbursts, these Poptarts are the episode we and Claire needed. Home-baking approved (no dehydrator), fully gourmet (100x better than original) and best of all no disaster day 3!.
